Quick summer redcurrant compote is ready. It is recommended to further cool it in the refrigerator before serving. The drink perfectly quenches thirst, tones, and restores vitality.

Option for winter

Instructions:

  1. Place the washed berries in clean, pre-sterilized jars.
  2. Stirring, bring the sugar syrup to a boil and pour it into the contents of the jars.
  3. After 5 minutes, pour the syrup back into the enamel pan and bring it to a boil again.
  4. Re-pour the hot syrup into the jars to the very top and, without wasting time, roll up their lids.
  5. We put the jars on the table, turn them upside down and wrap them in a blanket for a day. Next, the blanks can be taken for storage in the basement or placed on the bottom shelf of the refrigerator.

At the end of autumn and spring, such a compote will protect you from the negative consequences of vitamin deficiency. Due to the fact that the berries are not sterilized, most of the vitamins and microelements in their composition are preserved.

Quick cooking

In order to quickly prepare red currant compote, which can be consumed immediately, you need:

  • Prepare 1.5 cups of fresh berries (400 g), 0.5 - 1 cup of sugar (or 100 - 200 g);
  • The berries need to be sorted (remove the stems) and washed thoroughly;
  • To prepare the syrup, add sugar to boiling water (1.5 liters) and stir thoroughly (until the sugar is completely dissolved);
  • Add red currants to the finished syrup and cook for 1 - 2 minutes;
  • Remove the compote from the heat, cover with a lid and cool it.

For a better taste, you can leave the compote for an hour or two to steep.

Frozen currant compote

If necessary, instead of fresh red currants, you can use frozen ones (you can buy them at the grocery store). The method for preparing this compote is as follows:

  • It is necessary to boil water, add sugar and mix thoroughly;
  • Add frozen berries (no need to defrost them) and bring to a boil;
  • Cover with a lid and turn off the heat.

For half a kilogram of red currants, take 1 liter of water and 1 glass of sugar.

Long term storage

To prepare redcurrant compote for the winter, you need to choose the right dishes - large jars (2 or 3 liters) and iron lids. There are two ways to prepare compote for storage.

First way:

  • Jars with lids must be thoroughly washed (preferably with soda) and sterilized (dip the lids in boiling water for 1 - 2 minutes; steam the jars for 20 - 25 minutes, then place them on a clean surface and cover with the finished lid until use);
  • Red currants need to be sorted (leaving only whole and ripe berries, it is not necessary to remove the stems) and rinse well with clean water;
  • Place the berries and sugar (2 cups each) in a jar and pour 2 liters of boiling water (the water must be poured carefully, trying not to get on the walls of the container so that it does not burst);
  • Cover the jar with an iron lid and roll it up with a special machine;
  • The closed jar must be turned over several times (so that the sugar dissolves) and placed on the floor upside down, covered with a warm cloth (for 1 day);
  • After a day, turn the jar into its normal position and put it in a dark place for storage.

Second way:

  • It is necessary to prepare red currants and sterilize the dishes for compote;
  • Boil water in a saucepan, pour sugar into it, stir until completely dissolved and remove from heat (400 g of sugar for 2 liters of water);
  • Place berries in a prepared jar (2 cups of berries in a 3-liter jar) and pour hot sugar syrup;
  • Cover the jars with lids (sterilized) and roll up;
  • The compote must be turned over and placed on the floor (wrapped in a warm cloth) until it cools completely;
  • Store the finished compote in a dark and cool place.
