Everything ingenious is simple, now I know for sure. Because I tried a brilliantly simple but very tasty appetizer - tartlets with herring and beets. Indeed, the ingredients are the most affordable, the cooking process is easy and fast, and the end result is such beautiful herring tartlets that they can rightfully claim to be the highlight of your holiday menu.

The only point is that I would not recommend preparing this appetizer in advance, long before serving. Or rather, you can prepare the filling for tartlets with herring - boil and grate the beets, cut the fish fillets.

But it’s best to “assemble” the appetizer just before the guests arrive, so that it does not lose its attractiveness and looks appetizing and tempting. I hope you, like me, will like these herring tartlets, and you will certainly prepare them, and then share your impressions, okay?

Ingredients:

  • 10 pcs shortbread tartlets;
  • 100 g herring fillet;
  • 1 medium-sized beetroot;
  • mayonnaise;
  • lettuce leaves;
  • greens for decoration.

How to make tartlets with herring and beets:

We will need tartlets - small unsweetened baskets. Most often they are made from shortcrust pastry, less often from puff pastry. But in both cases, it turns out to be an excellent basis for a beautiful snack. You can buy tartlets in a store or make them yourself - it’s quite simple and doesn’t take long. For this recipe, I baked the tartlets myself, using shortcrust pastry.

Boil the beets until tender, peel and grate on a medium grater.

Place a small amount of mayonnaise on the bottom of each tartlet and, using a teaspoon or coffee spoon, carefully spread it along the walls and bottom of the tartlets.

We cover the inside of the tartlets with lettuce leaves so that they stick out coquettishly, slightly peeking out from the top of the baskets.

Carefully place the grated beets into tartlets. We don’t accept it - let it look exactly like this - easily and naturally. Take your time and proceed with caution - beets tend to stain everything they touch. So if, when filling the tartlets, some of the beets get on the side leaves of the lettuce, they will get dirty, and your appetizer will not look very neat.

Cut the herring fillet into thin strips, comparable to the size of the tartlet. In my case, the length of the strips was about 3 cm. And put 2 strips of herring in tartlets, on top of the beets.

If you like herring salad under a fur coat, you will definitely like this recipe for beet balls with herring. The appetizer is prepared much easier than the famous salad, and is in no way inferior to it in taste. And it also looks very beautiful on the holiday table. To prepare, you will need an inexpensive set of products. At least less than for a salad and a little time if you boil the beets in advance or buy them ready-made in any supermarket.

Ingredients

  • beets - 1 pc. (large);
  • chicken egg - 1 pc.;
  • hard cheese - 80 g;
  • herring (fillet) - 1 pc.;
  • dill - 3 sprigs;
  • salt - to taste;
  • ground black pepper - to taste;
  • mayonnaise - to taste;
  • parsley - for decoration.

Preparation

Let's start cooking by preparing the beets. The root vegetable can be baked in the oven or boiled. The first method will preserve vitamins, pulp juiciness and rich color. Before baking, rinse the beets well and dry with a towel. Wrap in several layers of foil and place in a hot oven. Baking time depends on the size of the root vegetable and the power of your oven. If the beets are large, it will take 1-1.5 hours. Check readiness with a bamboo skewer or toothpick. Once the beets are baked, they pierce easily. In this case, turn off the oven, remove the package and cool it. Grate the beets on a medium grater. Place on a cloth napkin or cheesecloth and squeeze out the juice, which can be used to make pancakes. Place the beets in a deep bowl.

Grate the hard cheese on a medium or fine grater. Add it to beets.

Boil the chicken egg in advance. If you take an egg out of the refrigerator, put it in cold water and put it on the fire - this way it will not burst. Boil the egg for about 9-10 minutes so that the yolk is firm. Cool in cool water and remove the shell. Grind on a medium grater. Add to other ingredients. Stir.

Finely chop the well washed and dried dill. Add it to the beet mixture. Season with salt, ground pepper and a little mayonnaise. Do not overdo it with the sauce so that the mass does not become liquid and greasy. If you don’t have mayonnaise on hand, any store-bought or homemade sauce will do – sour cream, cheese or Caesar.

Cut the salted herring fillet into small pieces. If you have a whole herring, clean it from the entrails. Rinse, separate the fillet from the backbone and small bones, and use as intended.

Take a portion of beetroot mass. Form into a flat cake. Add a piece of herring to the center. Be sure to do this with clean, dry hands, because the cold appetizer will not be cooked.

Form into a ball.

Prepare a flat dish for serving. Place the beetroot balls with herring, garnish with sprigs of parsley or dill and serve. Bon appetit!

  • Grind the pieces of herring along with other products - on a grater, in a meat grinder or blender.
  • Form the resulting mass into balls and place on a plate.
  • For piquancy, add a clove of garlic to the beet-herring mixture when chopping the products.

Let's prepare all the ingredients for making herring and beetroot appetizers. I already have herring fillets, I pulled out all the bones and sprinkled them with a little vinegar. I use the Cylinder variety of beets, they are always sweet and great for cooking. Daikon is a Japanese radish, I added it for piquancy and beauty.




The beets need to be boiled in a saucepan with water for 40 minutes, for this variety it is enough; if you have ordinary beets, cook for about 50 minutes. You can also boil the eggs in the same saucepan for 12 minutes, then pour ice water over the eggs so that the shells come off better.




Cut the herring fillet into pieces 1.5 centimeters thick, peel the beets and grate them on a fine grater.




Let's prepare the filling. In a bowl, mix the beets, a clove of garlic passed through a garlic press, French mustard, and mayonnaise. Separate the yolks from the whites by cutting the egg in half lengthwise. Finely chop the yolks and add to the filling ingredients.






Mix the filling thoroughly, stuff the whites with the aromatic beetroot filling.




Place a piece of herring on each egg, add a thin ring of daikon and garnish with any herbs, I used a parsley leaf, dill, cilantro, and basil are also suitable.
This appetizer of herring with beets can be placed on lettuce leaves or simply on a beautiful dish. It is prepared before serving so that it does not dry out. A wonderful snack is ready! How to prepare a herring and beet appetizer

Ingredients:

Herring – 150 g salted
Green onion – 5 sprig(s)
Onion - 1 pc.
Bread - to taste
Beetroot - 1 pc.
Mayonnaise - 6 tbsp.
Coriander – 2 pinch(s) ground
Black pepper - 2 pinch(s) ground
Lemon juice - 1 tbsp.
Gelatin – 15 g instant
Water – 50 ml
Sugar - 2 pinch(s)
Vinegar - 1 tbsp.
Vegetable oil- taste
Hard cheese - optional
Coconut flakes- optional
Salt - to taste


Preparation:


To prepare a herring and beet snack, you will need salted herring, beets, mayonnaise, lemon juice, instant gelatin, black or white bread, green onions, ground coriander and black pepper, vegetable oil, salt, hard cheese, coconut flakes, table vinegar, sugar.

Roast the beets. You will need a root vegetable weighing approximately 350-400 g. You can boil it, but the baked vegetable has a juicier taste and a richer color. Rinse, dry and wrap the root vegetable in foil. Bake for about an hour at a temperature of 180-200 degrees. Then cool.


To prepare the snack, it is better to use instant gelatin. Pour cold boiled water over it and leave to swell for 15-20 minutes.


Pickle the onion. Peel the onion and cut into small pieces. Add a couple of pinches of salt and sugar. Pour in vinegar and stir. Leave to marinate in the kitchen for 15-20. You can also use lemon juice instead of vinegar.

5. Cut the salted herring fillet into small cubes.



6. Add pickled onions and chopped green onions to the herring. Add a couple of drops of vegetable oil and stir.



7. Peel the cooled beets, cut into pieces and place in a deep bowl. Add mayonnaise of any fat content, ground coriander, black pepper, lemon juice and salt to taste. Blend with an immersion blender until smooth.

Heat the instant gelatin in the microwave until it completely dissolves and add it to the beet mass. Mix everything again and puree the mixture with a blender. Taste and adjust spices if necessary.


9. You can take white or black bread. Cut it into slices - approximately 0.5-0.7 cm thick. Using molding rings, cut out circles. To form the snack, I used three portion rings with a diameter of 8, 9 and 10 cm, a height of 5 cm. You can make a snack in one large mold, then the quantity of products needs to be increased.


10. Leave the cut out circles of bread at the bottom of the molds. Using a kitchen brush, grease the sides of the pans with vegetable oil.


11. Distribute the pieces of herring with onions onto a circle of bread and press lightly. Leave a small free space near the side wall along the entire diameter.

Use a spoon to distribute the beet mixture into all the molds. Place in the refrigerator until completely frozen. In this case, I needed to wait 3 hours for the beet mass to harden well.

Carefully remove the snack from the molds. Raise the shape a little and press down slightly - the appetizer will easily fall onto the dish.

The snack can be decorated, for example, with snowflakes. You can cut them from hard cheese if you have a special plunger. And also sprinkle coconut flakes on top. Or use your imagination and decorate it at your own discretion.
