It is difficult to say who and when prepared the first fruit dessert in history. However, he knew exactly what he was doing. It is difficult to imagine a sweet dish that is lighter in all respects. But most importantly, it will look beautiful and impressive on the table. This is probably why desserts with the addition of berries and fruits are still deservedly popular. And some even seem like a real temptation. Adding whipped cream and soft cottage cheese only adds to their elegance.

Dessert "Tangerines with white chocolate"

It’s hard to even imagine a more wintry one than this one. The combination of sweet and sour tangerines and delicate white chocolate cream, cream and yogurt makes it look like the landscape outside the window. At the same time, it is also incredibly tasty, tender and light. And it’s easier than ever to prepare it. Even a schoolboy can do it.

For 4 servings of dessert you will need:

8-10 tangerines (seedless);

200 grams of white chocolate;

300 ml natural yoghurt;

120 ml cream 20% fat;

Dark chocolate shavings for decoration.

How to cook?

To make this fruit dessert, you need to break white chocolate into pieces and add cream. It is not necessary to use fatty acids; 20 percent is enough. Place the cup in a water bath and stir until the mixture becomes homogeneous. Remove and cool. It is better not to do this in the microwave, as white chocolate has a very low (only 45-50 degrees) melting point and can curdle.

Add yogurt to the remaining chocolate mixture and mix well. The cream for the tangerine dessert is ready. Now you need to peel the tangerines and separate them into slices. It is very important to remove all white veins so that they do not spoil the taste of the dish. Also, do not take tangerines with seeds. Only in this case will you get a delicate fruit dessert.

Now you can start assembling it. Prepare deep glasses or bowls. Pour 1-2 tablespoons of white cream, then add tangerine slices. In this way, you should alternate layers until the bowls are filled. Top with grated dark chocolate. Place in the refrigerator for at least half an hour, and you can try the fruit dessert with cream. “Tangerines with white chocolate” will certainly come in handy on any holiday table. Especially in winter, when there is so little sun and bright colors.

Dessert "Three colors"

But the combination of cottage cheese, cookies and fruits or berries can become the basis for another, but no less tasty sweet dish. Unlike the previous recipe, this curd and fruit dessert can be prepared at any time of the year. For it, you can use any berries that are in season, and in winter use frozen ones. This delicate dessert with the natural sourness of fruits and berries will especially appeal to little ones with a sweet tooth.

For 2 servings of 200 ml each you will need:

100 grams of any shortbread cookies;

250 grams or mascarpone cheese;

250 grams of natural yogurt or thick sour cream;

6 tablespoons granulated sugar;

500 grams of any berries or fruits;

2 teaspoons potato starch;

A tablespoon of lemon juice;

Vanilla to taste.

Cooking procedure

First of all, you need to cook. If frozen berries or fruits are used, they need to be thawed in advance. Then mash the large ones slightly with a fork, and the small ones can be left unchanged. This curd and fruit dessert is most delicious with the addition of black and red currants, cherries and, of course, strawberries.

Add a tablespoon of sugar and lemon juice to the berries. Stir and place over medium heat. Bring the mixture to a boil and add starch diluted in 50 ml of water. Stir well, bring to a boil again and remove from heat. Cool completely at room temperature.

In the meantime, prepare the rest of the dessert ingredients. Grind the cookies into crumbs using a blender, meat grinder or rolling pin. For the curd layer, mix cottage cheese, yogurt, remaining sugar and vanilla. The mixture can be lightly beaten to give it a creamier texture.

Now all that remains is to combine all the ingredients together to make a fruit dessert. Place cookies on the bottom of the bowls. Then add half and half fruit sauce. Then repeat the last 2 layers, filling the glass to the brim. Top with whole berries, cookie crumbs or almonds if desired.

Fruit salad

A dessert that can hardly be called a dessert is a fruit salad. After all, it doesn’t look like him either in appearance or in taste. However, it enjoys well-deserved popularity among women. After all, if prepared correctly, it will not only allow you to pamper yourself with something delicious, but also not break your diet. After all, you can add your favorite fruits and berries to it and change the recipe according to your taste preferences.

For 4 large servings, take one apple, orange, tangerine and kiwi, 4 prunes, a few slices of grapefruit for decoration, 200 grams and natural yogurt to taste. First you need to prepare all the fruits. Wash, peel, remove seeds and cut into cubes. Remove the skin from the orange and grapefruit first.

Rinse the cottage cheese under running water to remove the cream. This dessert doesn't need them. Layer all the fruits: kiwi, orange, tangerine, apple and prunes. Sprinkle each layer with cottage cheese grains. Top with yogurt and garnish with grapefruit slices. You can mix it right away, but it’s better served in this puff form. This will make the fruit salad look more impressive.

Dessert with red currants and cream

Fruit and berry desserts occupy a special place among all recipes. They are distinguished by their bright color, sweet and sour taste and delicate texture. Those who are partial to red currants and cream will certainly not be able to stay away. Yes, and the rest too. It has only one drawback - it is eaten much faster than it is cooked. But doing it is not at all difficult.

For 10 servings you will need:

300 grams of red currants;

300 grams of granulated sugar;

400 ml cream with a fat content of 30-35%;

30 grams of gelatin;

100 grams of chocolate for decoration.

Dessert preparation process

So, first you need to make berry jelly. This is what many fruit and berry desserts have in common. For this, dilute 20 grams of gelatin in 150 ml of water and leave to swell. Meanwhile, puree the red currants. Add half a liter of water and 150 grams of sugar to it. Heat until sugar dissolves. Then add the swollen gelatin and bring the mixture to a boil, but do not boil. Pour the mixture into a bowl, filling only half of it, and put it in the refrigerator until it hardens completely. This will take at least 6 hours.

Further preparation of fruit desserts should begin only after this time. Soak the remaining gelatin in 100 ml of water, then dissolve it over low heat and bring to a boil, stirring constantly. Then whip the cream and sugar into a fluffy mass, add diluted gelatin and mix. Place on top of the berry jelly and refrigerate for another 3-4 hours. After this time, decorate with grated chocolate and you can enjoy a dessert that is bright in every sense.

With fruit, tender, light, jelly-like (gelatin is used in preparation), can be made with various fruits and berries, great in the summer at the dacha (but generally good at any time of the year and anywhere), a good alternative to ice cream.

This curd dessert can be made more or less sweet depending on your preferences (and this is due not only to the amount of sugar, but also to what fruits and berries you put there). Please note that you can put not only fresh fruits and berries (as in our photographs), but also canned ones. Canned peaches or apricots work very well, and pineapple slices are also good. Do you make preparations in the form of compotes? Great! Cherries, plums, apples, pears from homemade canned compotes are wonderful in this dessert. In general, here you can get creative and use in this fruit dessert everything that suits your taste with cottage cheese and with each other. Since the dessert is prepared in portions, you will need bowls or bowls, or at least wide glasses (in transparent glass forms, dessert with fruit looks very tempting!).

Need to:

  • Cottage cheese (soft, fat content at your discretion, or even low-fat) – 350 grams
  • Sour cream – 200 grams
  • Granulated sugar - 3 heaped tablespoons (if you want to make the dessert sweeter, you can use 4-5 tablespoons)
  • Gelatin – 12-15 grams (about 1 tablespoon), if you want your dessert with gelatin to look like a very dense and “steep” jelly, you can add up to 20 grams of gelatin
  • Boiled cooled water – 100 ml (0.5 cups)
  • Fruits and berries of your choice (we have: 1 banana, 1 kiwi, 5-6 strawberries, a small handful of black and green seedless grapes)

Preparation:

Fruits and berries must first be washed, dried and peeled. If you use oranges or tangerines, peel them to the pulp, that is, remove the thin skin that covers each slice. Pour gelatin into a small bowl with cold boiled water and leave for 10-15 minutes.

While the gelatin is soaking, cut the fruits (and berries if necessary) into thin slices or small pieces. Set aside a few of the cutest pieces to decorate the top of the curd dessert.

The cottage cheese should be free of lumps, so if you bought non-soft paste-like cottage cheese, first use a blender. Cottage cheese should be mixed with sour cream and sugar and lightly beat.

Melt the gelatin at a minimum heat level or in a “water bath,” stirring constantly, until liquid.

The melted gelatin needs to be poured into the curd mass and mixed until smooth (faster, of course, with a mixer).

Now we begin to lay out the dessert into molds (cremens, glasses). First, a small layer of curd mass, then fruits and berries “in artistic disorder,” then again a layer of curd mass and again fruits and berries. And so 3-4 times ( watch our video recipe!).

We decorate the last top curd layer with the same fruits. You can use chocolate chips or ready-made cake decorations instead of fruit (or together with them) for decoration. Portioned and garnished cottage cheese dessert place in the refrigerator for at least 1 hour (more is possible). Then we serve it on the table at the right time and enjoy it slowly!

This is probably the simplest one you can imagine. We will need cottage cheese, a little sour cream and sugar, and any fruit that is in season or to your taste. And also a blender to make fluffy curd cream from cottage cheese, sour cream and sugar. Five minutes - and the delicious dessert is ready! Of course, you can eat everything separately, it will also be delicious. But since we’re talking about sweets, having a few simple recipes in your arsenal for all occasions will be very useful. After all, you wouldn’t serve your guests a plate of cottage cheese and pieces of fruit, but such a cottage cheese dessert with fruit could well be a worthy end to any feast. Or a delicious breakfast that only takes a few minutes to prepare.

Ingredients:
- cottage cheese of any fat content – 250 g;
- thick fatty sour cream (at least 15%) – 2-3 tbsp. l;
- sugar – 3 tbsp. l (to taste);
- orange – 1 large;
- bananas – 2 pcs;
- sweet apples – 2 pcs;
- cranberries (or currants, raspberries) – a handful;
- liquid honey – 1 tbsp. l. per serving;
- grated chocolate or nuts - to decorate the dessert.

Recipe with photos step by step:

Transfer cottage cheese and sour cream to a blender. It is not necessary to take the fattest cottage cheese, even low-fat cottage cheese will do, but it should not be coarse and dry. If the cottage cheese is dry, you may need more sour cream.

Pour sugar into a blender. Here, be guided by your taste, and also take into account the acidity of the cottage cheese - the more acidic the cottage cheese, the more sugar you will need to add. Of course, it also depends on the chosen fruit. For example, you can put less in sugar, and more with sour raspberries or strawberries.

Beat everything with a blender into a homogeneous mass of creamy consistency. To prevent it from turning out liquid, first add 1 spoon less sour cream than indicated in the recipe (2 tbsp). If after whipping the curd mass turns out to be thick, then add the remaining sour cream; if it is a bit runny, then put it in the refrigerator for half an hour; in the cold the curd cream will thicken.

The consistency of the curd cream should be homogeneous, tender, airy, and as thick as very thick sour cream. If the cream is not very sweet, do not add sugar, otherwise the cream will become runny. It’s better to pour honey on it – it’s both tastier and healthier.

While the cream is cooling, prepare the fruit. Peel the bananas and orange. Cut into small pieces. It is not necessary to peel the apples, just cut them into pieces.

Place a layer of curd cream (about half the volume) on the bottom of a glass or bowl or bowl. Add fruit in any combination on top, sprinkle with cranberries or currants, raspberries.

Drizzle the dessert with honey, sprinkle with grated chocolate or nuts and serve slightly chilled. If the cream is being prepared for breakfast, you can simply mix it with chopped fruit and eat it immediately.
