I put the noodles in boiling water and cook for half the time required for cooking (see the cooking time on the package: if it needs to be cooked for 3-5 minutes, then I will cook for one and a half minutes). I drain the water from the noodles and toss the noodles into the vegetables in the pan. I mix everything properly and keep it in the pan for another minute or two.
  12. When serving, place vegetables and meat on top of the noodles in each bowl.

RECIPE No. 2. Spicy Chinese fried noodles with pork, celery and ginger

These noodles are very spicy. There is adjika, hot red pepper and garlic. Ginger and cilantro add a special aroma.

  1. Place salted water in a saucepan on the fire until it boils (for cooking noodles).
  2. Grind a bunch of cilantro (washed first),
  3. Chop the celery (cut and chop into pieces - chop into thin strips a few millimeters thick),
  4. Ginger root (the volume of ginger should be approximately the same as 1 - 2 fingers) is also chopped into thin slices
  5. Chop garlic
  6. Chili pepper – minced
  7. 2 onions – chopped
  8. Cut the pork into 1 cm cubes
  9. Throw egg noodles into boiling water and cook for 1-2 minutes. Usually these noodles are cooked for 3-5 minutes, but since we will also be stewing and frying them with vegetables in a frying pan, we cook them less than required. Immediately after cooking, drain the noodles in a colander and rinse with cold water (large amounts) to stop the cooking process. This should be done if you couldn’t figure it out so that the noodles could be placed in a frying pan with ready-made, fried vegetables immediately after cooking. I usually bring the vegetables to condition, and only then throw the noodles into boiling water - and immediately add the noodles to the vegetables in the frying pan.
  10. Pour vegetable oil (half a glass or more) into the bottom of a cauldron (a heavy frying pan with thick walls, or a wok), and heat it up very high.
  11. Place the onions in the oil, after a couple of minutes, ginger and celery, after another couple of minutes - hot pepper, after another couple of minutes - pork, stir and fry it all over very high heat for 10 - 15 minutes until ready.
  12. Throw in the garlic, add chopped tomato and adjika, 3 tablespoons of sugar (without a slide), pour in soy sauce. Stir.
  13. Place the noodles in the frying pan and mix them with the resulting vegetable sauce.
  14. Add chopped cilantro and mix again.
  15. Pour in sesame oil (it acts here as a flavoring agent, it is needed to give a special aroma to the dish. You can do without it).

RECIPE No. 3. Fried Chinese noodles with shrimp

Recipe from a real Chinese woman - an experienced chef of Chinese cuisine. This recipe is very healthy, the author of the recipe (her name is Ling) specializes in healthy cooking.

  1. Cut the onion into thin half rings.
  2. Chop the carrots into thin strips (straws), 5 mm each,
  3. Chop each clove of garlic in layers (1-2 mm), almost transparent, but wide.
  4. Salt peeled raw shrimp.
  5. Boil water for the noodles, add the noodles, cook for 1 minute, drain through a colander, pour cold tap water (plenty) to stop the cooking process, pour in a little oil (while the noodles are in the colander), stir. We add oil to prevent the noodles from sticking together.
  6. Everything is ready for frying: pour 2 tablespoons of oil into a high, heated frying pan, add shrimp to the oil, stir, they will immediately begin to turn pink. Fry for 1 minute, remove shrimp from oil with a slotted spoon.
  7. Pour in more oil, add onion rings to the frying pan, fry for 2 minutes, stirring.
  8. Add carrots and the white part of chopped green onions to the onion, fry, stirring for another minute, add salt.
  9. Add noodles to the pan, a tablespoon of soy sauce (stir), stir and fry.
  10. Add shrimp to skillet with noodles and vegetables.
  11. Add the green part of the green onion, fry, stir, and another tablespoon of soy sauce. Stir and fry until done.

My acquaintance with Chinese cuisine happened a long time ago when I was on a business trip in Singapore.

Of course, I forgot a lot of what was there, but the celebration of the Chinese New Year, as well as Bengali and Chinese cuisine, is quite difficult to forget.

Chinese New Year is something unforgettable! Colorful dragons, processions through the streets, trucks rushing here and there, in which a group of people with red armbands with drums and musical cymbals played incessantly.

Singapore itself amazes with its magnificent performances. This is Sentosa Island, with a bunch of attractions, attractions, including the Underwater World, the Light Fountain and terribly expensive drinks. Impeccable cleanliness, year-round temperature of +35 degrees and an absolute absence of dust and almost daily light rain! And the air, so heavy and saturated with unfamiliar aromas!

I was able to try several different cuisines there. Most of all, of course, I was struck by Bengali and Chinese cuisines. Bengal - with its CRAZY spiciness (imagine, in a small portion bowl with pieces of chicken there were THREE hot peppers! And the hottest ones!).
Chinese cuisine did not impress me at first, because... it is sold in most eateries and, like any fast food, it was very different from the “classic” one. But when we were invited to a Chinese restaurant, it was a completely different matter. First, they brought us live shrimp, which were doused with cognac (so that we could make sure that the shrimp were alive and fresh when they were later taken away for cooking). Then came a series of dishes. These were very small portions of a variety of dishes, but there were more than ten of them (it is noteworthy that liquid and non-liquid dishes alternated completely unpredictably). And when I was already full, they brought us a huge dish with crabs in an original sauce. With beer, which in Singapore is very, very good, the end of the meal was simply magnificent...

But I digress
The philosophy of Chinese cuisine is completely different from European cuisine. I won't go into details, but if you go to a restaurant somewhere in Moscow or your city and order top dishes, you will never get an idea about their food. It is a large number of dishes in small portions, a menu compiled in a certain way according to the canons of Chinese cuisine, that provides balanced nutrition, great pleasure from food and is also therapeutic.

However, I want to present you with one dish that is prepared very simply and very quickly - literally 20 minutes, but the result is simply magnificent and if you suddenly have guests, you will greet them with honor

So, Chinese chicken noodles - in 20 minutes
Of course, this is not quite a classic recipe. I saw this recipe in one of the programs, but changed it a little to my taste. I didn't add sugar because... For me, the sweetness of the pepper is enough and I added wine vinegar, although it is better to add Chinese wine. In addition, ingredients like ginger and hot pepper appear differently in different recipes. Usually hot peppers are taken dried.

Ingredients

onions (preferably white - with white skin) 1 small head
5 spice mixture 1 tsp
ginger (preferably fresh, cut into strips) 1 tsp

Ingredients:

  • flour – 200 g;
  • starch – 40 g;
  • water – 130 g;
  • soda;
  • salt;
  • flour for pulling noodles.

Preparation

  1. Cooking Chinese noodles begins by sifting flour, starch and salt.
  2. Dissolve baking soda in water and add to dry ingredients.
  3. Knead the dough for at least 50 minutes.
  4. Divide the lump into portions, roll them into strands, which are pulled out, grabbing the ends with both hands and winding the resulting elongated “threads” on the palm of your hand like yarn.
  5. During the stretching process, regularly dip the dough into flour.
  6. Having achieved the desired thickness of the “threads”, cut off the edges.

Chinese noodles with chicken


Chinese noodles with chicken and vegetables, the recipe for which is outlined below, turns out to be nutritious, light and surprisingly piquant. Sometimes the composition of the dish is supplemented with green peas and leeks, which enriches the taste of the dish and makes it even more attractive in appearance. From the specified quantity of products you can prepare 4 servings.

Ingredients:

  • chicken fillet – 400 g;
  • noodles – 400 g;
  • carrots and bell peppers – 2 pcs.;
  • garlic – 5 cloves;
  • soy sauce – 6 tbsp. spoon;
  • sesame – 1 tbsp. spoon;
  • oil, salt, black pepper and chili.

Preparation

  1. The chicken is chopped, mixed with garlic and soy sauce, and allowed to soak for 20 minutes.
  2. Boil the noodles and drain them in a colander.
  3. Place meat in heated oil and fry until pale.
  4. Add carrots and bell peppers cut into thin strips and simmer for 10-15 minutes.
  5. Next, add boiled Chinese noodles, sauce, sesame seeds to the pan and heat for a couple of minutes.

Chinese chicken noodle soup


When choosing a first course for lunch, you can cook a delicious Chinese noodle soup. The hot dish is low in calories, light and healthy. No harm to the figure, but only true pleasure from tasting the food. Another pleasant point is the quick preparation of the dish. If you have all the components, you can arrange it in just 30 minutes.

Ingredients:

  • chicken fillet – 300 g;
  • noodles – 50 g;
  • tomatoes – 1 pc.;
  • pak choi cabbage – 150 g;
  • ginger – 20 g;
  • garlic cloves – 1-2 pcs.;
  • hot pepper – ½ pod;
  • soy sauce – 3 tbsp. spoons;
  • oil – 2 tbsp. spoons;
  • chicken broth – 1.5 l;
  • cilantro, green onions.

Preparation

  1. In a wok or pan, fry chopped tomato in oil, and whole ginger, hot pepper and garlic.
  2. Pour in soy sauce and broth, add chopped chicken, and cook for 10 minutes.
  3. Add noodles, cook until done.
  4. Remove and discard the ginger, capsicum and garlic.
  5. Cut the cabbage into pieces, put it in a saucepan, let it boil and turn off the heat.
  6. The soup is served with cilantro and onion feathers.

Pork with Chinese noodles


Spicy and satisfying Chinese pork noodles will satisfy the needs of gourmets who prefer dishes with contrasting flavor combinations. with a tomato note will not leave anyone indifferent. If you have all the ingredients, you can feed four people enough in just 30 minutes.

Ingredients:

  • pork – 500 g;
  • noodles and mushrooms – 200 g each;
  • sweet pepper – 1 pc.;
  • ground ginger – 1/4 teaspoon;
  • dried garlic and red pepper - ½ teaspoon each;
  • rice vinegar and honey - 1 tbsp each. spoon;
  • ketchup – 1 tbsp. spoon;
  • flour – 1 tbsp. spoon;
  • oil – 50 ml;
  • salt, green onions.

Preparation

  1. The meat is cut into thin strips, seasoned with ginger, garlic, flour, fried in oil, and placed on a plate.
