Today I have a whole story, even an epic, as I first cooked grilled chicken on a spit in the oven. You will read about all my sufferings and observations below if you wish, but I want to assure you that this recipe makes very tasty chicken. Juicy and very tender meat literally falls off the bone itself, and the flavor of the grilled chicken hovers throughout the apartment ...

It all started with the following: forced to purchase a new gas stove (the old one could no longer be exploited due to its older age), first of all we studied the instructions. It is clear that they simply could not stop at the Grill section - there was no such function in the old oven. That is why it was decided to catch up in the near future and cook homemade grilled chicken on a spit in the oven.

Passing the details, I will say that the result was more than pleased, even despite all the difficulties that I had to face. Here I mean the process of stringing the carcass on a spit. I searched for information on the Internet for a long time, how to do it correctly, but I did not find anything useful. Probably, it comes to every culinary specialist in an extremely experienced way.

To cook grilled chicken on a skewer in the oven, we will need the following ingredients: a whole chicken carcass (I have 2 kilograms), water, common table salt (any grinding), as well as spices and spices to your taste. For the salt bath I used bay leaf and a mixture of peas (there I have fragrant, black, white and pink). She rubbed the carcass before baking with a mixture of turmeric, paprika and dried garlic, but you can choose absolutely any - which are in harmony with chicken meat and you like it better.



So, for starters, let's arrange a salt bath for our chicken carcass. We take a suitable size dish (I have a duck) and pour cold water into it. Add salt, bay leaf and pepper. Mix everything so that the salt dissolves. In general, the amount of water (and salt, respectively) depends on the size of the chicken and the dishes in which it will rest. For 1 liter of water we take 3 good tablespoons of salt, that is, for 3 liters it took 9 spoons with a slide. Saline solution turns confidently salty in taste - it should be so! Do not worry: the excess chicken will not take.



Immerse the carcass in the solution so that it is completely covered with liquid. I had a little breast sticking out, so after 1.5 hours I just turned it back up for even salting. We set aside in a cool place for 3-3.5 hours.





We rub hands outside and inside with fragrant spices and spices. It is not necessary to use those that I indicated in the ingredients - this is a matter of taste.



Now you need to secure the chicken legs: you can simply tie them together with a thread or act like me. Do 2 through punctures with a knife in the place of the inside of the chicken thigh, where fat is usually the most accumulated. Then pass through the right leg through the hole in the left thigh and vice versa. The photo is hard to see, but I hope you understand what you need to do.

Regarding grilled chicken, there are many false claims. For example, that it is a very harmful meat, literally soaked in carcinogens. On this occasion, we note that carcass purchased in the supermarket and processed with a large number of expired mayonnaise is really unhealthy.   But grilled chicken in an electric oven or in a gas oven, baked in a fragrant sauce with herbs, will not do any harm, it will only please a true gourmet.

Moreover, the meat is healthy! After all, if you count the calories, then in the finished carcass there are fewer of them than in the boiled piece.   So cooking grilled chicken at home in the oven will save only 98 calories for every 100 grams of meat. For comparison, in the boiled chicken calorie is 138 units, and in the fried - all 200.

Cooking details

  1. Use only fresh or chilled meat.   It turns out more tender and juicy than frozen chicken.
  2. If the recipe for chicken in the oven on the grill includes marinade, let it be based on refined sunflower oil.   It has the most neutral taste, which does not interrupt the taste of the main product.
  3. Ate all the same bought a frozen carcass, do not defrost it in the microwave or in the room.   In the first case, the meat will begin to cook already during defrosting, and in the second it will become hard and dry. Ideal - defrosting in the refrigerator, on the "warmest" shelf, that is, away from the freezer.
  4. Contrary to popular belief, cook the chicken in the oven on a spit entirely from the factory carcass rather than homemade.   The latter is good for stewing, and on the grill it may turn out to be too tough. If you still have homemade chicken at hand, soak it in saline: add half a glass of salt to 2 liters of water, let stand for 2-5 hours, dry and then cook. So it will be perfectly soft.
  5. You can check the readiness of meat with a cooking thermometer: the temperature inside should be 85 degrees.   Or you can use an ordinary toothpick, but you shouldn't pierce the breast, but the thigh, since the last one prepares longer. Flowing clear juice will be evidence that the meat is ready.
  6. Remove the carcass from the oven immediately after cooking and serve immediately.   If you hold it longer, the meat will dry up, and the crisp will limp in anticipation of the table.

Grill Chicken Cooking Techniques

There are 2 ways to cook chicken in the oven with a grill.

  1. Chicken in the oven on a stand   - it turns out a dish with a perfectly crispy crust, as the carcass does not come into contact with draining fat during the cooking process. For the most delicious result, “estimate” the time required for roasting (40 minutes per kg of chicken weight). And most of the time, bake the chicken at a temperature of 200 degrees, and 15 minutes before the end of cooking, turn on the grill.
  2. Try to cook grilled chicken in the oven on a skewer.   To do this, the carcass is placed on a spit, the wings and legs are well fixed (it is convenient to do this with toothpicks or a culinary thread). Placed in a cold oven, turn it on in the "spit" with a temperature of 200 degrees for 20 minutes. During this time, a crust forms on the carcass, which “seals” the juice inside. After that, 30 minutes the meat is baked in the "top-bottom" mode, the temperature is reduced to 180 degrees. Then another 30 minutes is cooked in the “grill” mode, raising the temperature to 200.

You will need:

  • chicken carcass;
  • garlic - 6 cloves;
  • butter - 50 g;
  • salt and pepper, vegetable oil.

Cooking

  1. Chop the garlic into thin slices. Place them gently under the skin of the hen. Place a few pieces of butter in the breast area.
  2. Mix vegetable oil, pepper and salt. Coat the carcass with this mixture.

You will need:

  • chicken carcass;

Heat the oil, put the chili pepper and rosemary in it. Leave over low heat for 2 minutes, then pour lemon juice into the butter, hold on the fire for another couple of minutes and remove from heat.

In a large bowl of honey, mix with mustard and thyme, then pour the contents from the pan. Marinate a chicken in this composition for about 5 hours. Next, put the chicken in the oven and bake for an hour.

In these cases, the bird can be baked both on a spit and on a grate, if the latter is absent.

There are several options for cooking chicken on the bank.
