Ingredients for the dough:

  • Flour – 2-3 cups;
  • Butter – 1 package;
  • Sugar – ½ cup;
  • Soda – 1 teaspoon.

Filling ingredients:

  • Cottage cheese – 300-400 grams;
  • Egg – 1 piece;
  • Vanillin – 1 package (to taste);
  • Sugar – 1 glass.

Preparing a crumble pie with cottage cheese according to the recipe is not difficult in principle, but for your confidence we have detailed the step-by-step process:

  1. The first thing you need to do in the kitchen when planning to bake is to turn on the oven. Since the ingredients for the pie are prepared quite quickly, this time is quite enough for it to warm up thoroughly. So, set the temperature to 200-220 degrees (it all depends on your oven) and start cooking.
  2. We freeze the butter in the freezer, this will make it much easier to knead into crumbs.
  3. Grate the frozen butter.
  4. Sift the flour and mix with soda or baking powder.
  5. Mix butter, sugar and a mixture of soda and flour in one bowl, then knead the crumbs by hand. Please note that our task is not to knead the classic shortbread dough, but to leave it in the consistency of crumbs. We put everything in the refrigerator, since both shortbread dough and shortbread crumbs do not like heat.
  6. Now let's start preparing the filling. Here the algorithm will depend primarily on your taste and on which version of cottage cheese you prefer. If this is a curd mass that initially has a homogeneous consistency, then you can immediately begin mixing. For grainy cottage cheese, if you don’t like this structure, you will have to grind it through a sieve or pass it through a meat grinder. If you want to maintain the graininess, you will have to knead the filling very, very carefully.
  7. Having decided on the texture of the filling, we begin to combine all the ingredients. It is better to beat the egg separately with sugar until thick foam, then just add this sweet mixture to the curd mass and stir.
  8. Preparing the form. It is advisable to first grease a regular mold with a small piece of butter; with a silicone mold, such manipulations are not at all necessary.
  9. We divide the crumbs in half, since we will lay them out in two layers. The first layer is flour crumbs, the second will be the curd-egg mass, which must be evenly distributed throughout the entire mold. The last layer is the remains of the crumbs. We try to distribute them so that they completely cover the cottage cheese.
  10. We put everything in the oven. On average, a cottage cheese pie with crumbs is baked for about 20 minutes, but it is better to focus on its condition than on the recommended time, because different ovens can work completely differently. In this case, a golden brown crust does not always indicate readiness, since the readiness of the filling is of great importance here. If the crust is already ready, take out the baked goods and check the consistency: shake a little. The finished treat will not “shudder”. If it remains a little liquid, you need to reduce the baking temperature and send the cake again for another 10 minutes.

Try not to remove the baked goods from the pan until completely cooled, as it may break. It is also better to serve it already cooled, because hot cottage cheese can seriously burn you. How to submit? As your heart desires! You can simply cut it into segments and present it with a cup of tea, or you can feel like a real artist and create a mini-masterpiece on a plate. Decorate it with fruit sauce, pieces of colorful jelly or jam, and sprinkle with powdered sugar on top. The final touch is a mint leaf. Believe me, no one will even guess that under all this beauty there is hidden the most ordinary cottage cheese pie with shortbread crumbs.

Pie with margarine

As you know, both butter and margarine are equally suitable for shortbread dough. Moreover, the latter makes baking much more budget-friendly, because the cost of these products differs significantly. That’s why we decided to offer you a recipe for a cheaper delicacy:

  • Flour 3 cups;
  • Margarine – 1 pack (200-250 grams);
  • Soda 12; teaspoon (can be replaced with 1 teaspoon baking powder);
  • Cottage cheese 400 grams;
  • Egg 1 piece;
  • Sugar 1 glass.

Now let's start preparing the pie with margarine:

  1. There is no need to freeze margarine, just keeping it cold is enough.
  2. Sift the flour and mix with soda, pour it onto the prepared surface in a heap. It will be much more convenient to knead the crumbs on the table rather than in a bowl.
  3. Place the chilled margarine in the center of the mound and chop it into small pieces with a knife. When the margarine is fine enough, you can continue kneading with your hands. The main thing is not to overdo it and not turn the crumbs into a full-fledged dough. You can add sugar to the mixture, but we did not include it in the recipe, since many people find the combination of sweet dough and the same filling very cloying. Divide the resulting amount of crumbs into approximately two equal parts and place them in the refrigerator while we prepare the filling.
  4. Turn on the oven and start preparing the filling. Beat the egg with sugar in a separate bowl. If you feel that one egg is not enough for this amount of cottage cheese, you can add another one, because, as they say, you can’t spoil porridge with oil.
  5. Give the cottage cheese a homogeneous structure using a blender or meat grinder and add to the egg mixture. Bring until smooth again. That's it, the filling is ready. It's time to start shaping the pie.
  6. A springform pan is most suitable for baking, since then there are no problems with taking it out. Grease the pan with a small amount of margarine or cover the bottom with parchment. Lay out the crumbs as the first layer. If you are very confused by its porous structure, you can press it down a little with your fingers. Then pour in the curd and egg mixture and smooth out thoroughly. The last layer is the second part of the crumb. We try to completely cover the top with it.

Now we send our workpiece to the oven, which has warmed up by that time. The baked goods will be ready in about 20-30 minutes, but after about 15 minutes, start watching the top. A feature of some ovens is that the top layer of the pie begins to burn, while the middle is not baked well enough.

Therefore, if you see a watery structure of the pie itself when the crust is golden brown, slightly reduce the baking degree. Some chefs also recommend covering the baked goods with parchment or a sheet of paper on top (however, this is not advisable if the pan is located in close proximity to a heat source). It is advisable to serve it cooled.

Our family really loves baking from shortbread dough, so I bake a lot of shortbread pies with different fillings. But when it’s time for berries, this is the recipe that all relatives prefer and it supersedes all others. This shortbread pie can be made with any berries: cherries, strawberries, blueberries, currants (black and red), plums, blackberries, cinnamon apple (finely chopped and pre-toasted with cinnamon in a frying pan). 100 g powdered sugar (fine sugar).

40 g cane sugar (you can safely use regular sugar);

4 tbsp. l. potato starch;

3 tbsp. l. ground vanilla crackers.

Cooking steps

To prepare the crumbs, take flour, powdered sugar and butter at room temperature.

Place about half of the crumbs in a lightly buttered pan and press lightly with your hands to form an even layer.

Place in the oven to brown for 15 minutes, preheated to 180 degrees.

Take out the crust and sprinkle evenly with ground breadcrumbs. Rusks can be grated on a fine grater.

Let's prepare the filling. If you use frozen cherries, be sure to let the juice drain. Add starch and sugar to the cherries and mix gently.

We spread the filling onto our crust, sprinkled with breadcrumbs.

Sprinkle the remaining crumbs on top, just sprinkle it, no need to press hard and level it. The top of the pie should be loose.

Cherry crumb cake is ready. We enjoy the result!

“Torn” pie (classic recipe)

This pie turns out delicious the first time. This is a great baking option for a novice housewife.

Ingredients:

  • chicken eggs - 3 pcs.;
  • first-grade wheat flour - 3 tbsp.;
  • butter or margarine - 1 pack (250 g);
  • granulated sugar - 1 tbsp.;
  • baking soda, slaked with lemon juice - 0.5 tsp;
  • apricot jam - 2/3 tbsp.

Preparation:


If apricot jam is prepared in large pieces, then for this recipe you should first grind it with a blender or at least grind it with a fork. Serve the pie cooled.

Sour cream pie with jam


The pie with sour cream dough turns out soft and tender. It is better to take a dairy product of medium fat content - not too thick. Sour cream, which has already begun to slightly sour, is also suitable as a base for the pie.

Ingredients:

  • butter - 200 g;
  • chicken egg - 2 pcs.;
  • sugar - 150 g;
  • sour cream - 150 g;
  • soda - 1 tsp;
  • flour - 300 g;
  • currant jam - 200 g.

Preparation:

  1. 1. Remove all ingredients stated in the recipe from the refrigerator in advance so that they become the same (room) temperature. Place the contents of raw eggs into a bowl. Pour all the sugar on top at once. Mix the ingredients well. You can lightly beat them. The sugar should begin to dissolve in the egg mixture.
  2. 2. Add the remaining bulk components to the base for the future dough. Pre-sieve the flour and soda a couple of times from a high distance. Add sour cream to the mixture. Repeat mixing.
  3. 3. The bowl should have an elastic and soft dough that is easy to work with. It needs to be divided into two approximately equal parts. One of them should be placed in the freezer for about half an hour. The second must be immediately distributed over an oiled baking sheet with high sides. You can roll it out with a rolling pin, but it’s convenient to just knead the dough with slightly damp hands.
  4. 4. You need to distribute the selected currant jam on top. Its layer should not be too thick. The already frozen part of the dough should be crushed using a grater with the largest divisions and distributed on top of the spread jam.
  5. 5. It is necessary to preheat the oven to +170...+175 degrees in advance. Place the baking sheet with the future pie into it. Bake the treat for about an hour. During this time, the pie with currant jam should be covered with a golden, delicious crust on top.

The finished delicacy needs to be cooled and cut into portions. Plum and apple jam also goes well with the dough from this recipe.

Delicate version with fruit soufflé


This shortbread pie has a separate name - “Sissie”. If you try the delicacy, you will immediately understand where it came from. The dessert tastes like Bird's Milk, but is prepared much faster and easier.

Ingredients:

  • creamy margarine - 125 g;
  • sugar (for dough) - 1 tbsp.;
  • salt - on the tip of the knife;
  • egg yolk - 4 pcs.;
  • wheat flour - 2 tbsp;
  • dark chocolate - 50 g;
  • cream (or full-fat milk - in the dough) - 1 tbsp. l.;
  • egg white (in soufflé) - 4 pcs.;
  • gelatin (instant) - 1 tbsp. l.;
  • sugar (for soufflé) - 6 tbsp. l.;
  • pear - 1/2 pcs.;
  • banana - 1/2 pcs.;
  • cream (or full-fat milk - in soufflé) - 150 ml;
  • vanilla sugar - 1 sachet.

Preparation:

  1. 1. Cool the creamy margarine well. Grind using a grater with the largest divisions. Add half of the sifted flour to the margarine.
  2. 2. Grind the ingredients into crumbs using your hands.
  3. 3. Add the remaining bulk ingredients from the recipe, except flour, to the resulting mass. These are granulated sugar, salt and vanilla sugar. Mix everything well.
  4. 4. Add egg yolks to the dough one at a time. Mix the ingredients and only then add the rest of the flour.
  5. 5. Knead a stiff, dense dough. Using your hands, roll it into a large ball. Wrap in a bag and place in a cool place for 20 minutes.
  6. 6. Line a round pan with high-quality parchment. There is no need to oil it additionally.
  7. 7. Place most of the chilled dough into it. Leave only a small piece.
  8. 8. Mash the mixture into a container. Form the sides. Use a wide, convex spoon to smooth out the marks from your own fingers.
  9. 9. Place the pie base in the cold for 10 minutes. During this time, preheat the oven to +200 degrees.
  10. 10. Transfer the pan with the base to the oven. Place the remaining dough, rolled out and cut into pieces, on a baking sheet nearby.
  11. 11. Bake the pie at the indicated temperature for just under half an hour.
  12. 12. Break the dark chocolate into pieces. Fill it with cream (for the dough). Place in the microwave or water bath. Turn the ingredients into a smooth glaze.
  13. 13. Grease the finished sand base with the resulting chocolate mixture.
  14. 14. In a separate bowl, pour high-quality gelatin with the remaining (for soufflé) cold cream. Allow the bulk component to swell.
  15. 15. Beat cold whites with a mixer/blender until they form a strong, thick foam. Pour sugar (for soufflé) into the air mass in small portions. At the same time, do not stop whipping.
  16. 16. Add small pieces of peeled fruit to the future soufflé. Beat the ingredients together until smooth.
  17. 17. Dissolve gelatin in a water bath or in the microwave. Strain through cheesecloth. Pour little by little into the egg white mixture. Beat ingredients at minimum speed.
  18. 18. Pour the egg white mixture onto the pie base.
  19. 19. Refrigerate for a couple of hours. Leave until completely hardened.
  20. 20. Turn the remaining baked parts of the dough into crumbs. Sprinkle it over the already frozen soufflé pie.

Chocolate glaze is an optional component of the cake. You can leave the base without filling.

"Styopka-Ratter"


Ingredients:

  • butter - 250–270 g;
  • wheat flour - 3 tbsp;
  • sugar (for dough) - 1/2 tbsp.;
  • sour cream (for dough) - 4-5 tbsp. l.;
  • baking soda - 1 tsp;
  • sour cream (for filling) - 3-5 tbsp. l.;
  • cottage cheese - 500-700 g;
  • sugar (for filling) - 1.25 tbsp;
  • vanilla sugar - 1 tsp;
  • banana - 1-1.5 pcs.;
  • cranberry jam - 1 glass;
  • semolina - 1 tbsp. l.

Preparation:

  1. 1. Leave the butter at room temperature until completely softened. This process should not be accelerated by using a microwave.
  2. 2. Immediately mix the flour with quicklime soda. Add ingredients to butter.
  3. 3. Add sugar, sour cream. Knead into a soft dough with your hands. Divide it into two unequal parts, roll each into a sausage and put it in the freezer for 17-20 minutes.
  4. 4. Coat the mold with softened butter. Sprinkle with semolina.
  5. 5. Peel the banana, cut into thin slices. The fruit should be ripe and soft, but not blackened.
  6. 6. For the filling, mash the cottage cheese with a fork. Add the remaining granulated sugar, sour cream, vanilla sugar to it. Mix the ingredients until smooth.
  7. 7. Turn on the oven and preheat to +175...+180 degrees.
  8. 8. Remove most of the dough from the refrigerator and roughly rub into the pan. Place banana slices on top. Distribute the curd mass.
  9. 9. Cover everything with the remaining grated dough.
  10. 10. Place the pie in the already hot oven.
  11. 11. Cook the treat for 40–45 minutes without changing the temperature.
  12. 12. Cover the top of the dessert with cranberry jam.
  13. 13. Leave the pie to cool completely and only then cut into pieces.

You can sprinkle the finished treat with cranberry jam with coconut flakes or grated chocolate. Many housewives leave such baked goods without decoration, since “Stepka-Rastrepka” itself looks very appetizing.

“Sprinkling” on margarine


Ingredients:

  • flour - 400 g;
  • margarine - 250 g;
  • eggs - 2 pcs.;
  • sugar - 1 tbsp.;
  • sour cream - 2 tbsp. l. (or kefir 2 tbsp, can also be replaced with mayonnaise - 2 tbsp);
  • baking powder - 1 tsp;
  • spices - to taste;
  • any thick jam - 2/3 tbsp.

Preparation:

  1. 1. Soften high-quality creamy margarine. Add all the granulated sugar called for in the recipe. Mash until white with a fork/whisk.
  2. 2. Add your favorite spices to the resulting mass. Ground cinnamon, vanilla, cardamom, and nutmeg go well with this recipe.
  3. 3. Add sour cream (kefir/mayonnaise). Mix everything thoroughly.
  4. 4. Combine flour with baking powder. Without stopping stirring the dough, add the dry mixture into it.
  5. 5. Knead a thick but soft pliable dough. Divide it into two parts.
  6. 6. Immediately put half of one of the parts in the refrigerator.
  7. 7. Distribute the rest of the dough into the prepared oiled pan. It is advisable to use a large rectangular one.
  8. 8. Spread thick jam over the dough. Its quantity must be adjusted to your taste.
  9. 9. Pour the remaining frozen dough onto the jam, using a grater to turn it into shavings.
  10. 10. Bake the treat in the oven. This will take 40–45 minutes at a temperature of +190 degrees.

Cool the finished “Sprinkle” pie completely, cut into small “boats” with a sharp knife. Serve with herbal tea.

"Anthill"


Shortbread pie with jam can be prepared according to the principle of the “Anthill”, beloved by many. In this case, the grated dough will be poured into a heap. Instead of condensed milk for the cream, you need to use berry/fruit jam.

Ingredients:

  • wheat flour - 3 cups (360 g);
  • sugar - 1 tbsp. (130 g);
  • egg - 2 pcs.;
  • butter - 190 g;
  • soda - 0.5 tsp;
  • lemon juice - 1 tsp;
  • salt - 1 pinch;
  • berry/fruit jam - 1 tbsp.;
  • chocolate - 1/2 bar.

Preparation:

  1. 1. In a deep bowl, mix softened butter with granulated sugar. Using a spatula, grind the ingredients into a cream.
  2. 2. Beat the eggs in a separate container along with a pinch of salt.
  3. 3. Combine the two mixtures from the first steps. To stir thoroughly.
  4. 4. Place a fine sieve over the bowl with the dough base and pour flour through it.
  5. 5. Quench baking soda with freshly squeezed citrus juice. The resulting foam is also added to the dough.
  6. 6. With wet hands, knead into a stiff dough. Form it into a bun, cover it with a bag and put the product in the refrigerator for a quarter of an hour.
  7. 7. Line a baking sheet with parchment paper (high quality). Cover it with dough, crushed using a medium grater.
  8. 8. Place the baking sheet in an oven preheated to +180 degrees. Leave there until all the dough is golden brown.
  9. 9. Cool the finished crispy layer. Then it can be broken into pieces or grated on a coarse grater. The main thing is not to wait until the dough has cooled completely, otherwise it will be very difficult to do.
  10. 10. Add jam to the crumbs. Mix the mass well.
  11. 11. Transfer to a flat plate. Use your hands to form a slide in the shape of an anthill.
  12. 12. Leave the treat in the refrigerator overnight.

On top you can decorate the finished delicacy with the remains of the crushed dough. Cover the resulting dessert with a grated chocolate bar.

Open grated pie


Ingredients:

  • wheat flour - 450 g;
  • butter - 200 g;
  • granulated sugar - 200 g;
  • large chicken egg - 2 pcs.;
  • baking soda (quicklime) - 5 g;
  • white wine vinegar - 10 g;
  • vanillin - 1 g;
  • jam - 500 g.

Preparation:

  1. 1. Place the butter in a small saucepan. Place on a hot stove and dissolve over low heat. Leave to cool.
  2. 2. Add all the granulated sugar to the melted butter. Beat the ingredients with a mixer at minimum speed.
  3. 3. Add vanillin. Pour the contents of raw eggs into the mixture. Mix everything well.
  4. 4. Sift the flour through the finest sieve at least 2 times. Introduce it into the dough base in a thin stream.
  5. 5. Knead a soft, pliable dough. Place it in a cool place until completely cooled.
  6. 6. While the dough is cooling, prepare a springform pan - cover it with high-quality parchment paper. A pie with a diameter of 22–24 cm is suitable for this recipe.
  7. 7. Remove the dough from the refrigerator and divide into two unequal parts. The proportions are approximately 2/1.
  8. 8. Sprinkle the working horizontal surface with flour. Roll out the dough on it in a circle with a diameter approximately equal to the shape. Transfer the base to the prepared container. Form the sides.
  9. 9. Use a fork to make small punctures across the entire surface of the base. Spread jam on top. It is most convenient to use thick sweetness for this purpose.
  10. 10. Coarsely rub the second part of the dough. Pour the shavings only around the circumference of the pie to create small edges of dough. Leave the middle empty or place miniature flowers cut out from the remaining cold mass over it.
  11. 11. Place the mold in an oven preheated to +200...+210 degrees. Bake the treat for 30–35 minutes.

When the cake is removed from the oven, cover it with a clean kitchen towel made of natural fabric. Leave it like this for 8-10 minutes. Only then cut the pie into slices.

Quick recipe with berries (in vegetable oil)


This version of the pie belongs to Lenten baking. If desired, the berries with starch from the filling can be replaced with ready-made jam.

Ingredients:

  • flour - 3 tbsp;
  • refined vegetable oil - 150 ml;
  • fine salt - 1 tsp;
  • granulated sugar (for dough) - 4 tbsp. l.;
  • freshly squeezed orange juice - 4 tbsp. l.;
  • drinking filtered water - 2 tbsp. l.;
  • any fresh berries to taste - 2 tbsp.;
  • potato/corn starch - 2 tbsp. l.;
  • granulated sugar (for filling) - 1 tbsp.;
  • spices (ground nutmeg, cinnamon) - 1 pinch.

Preparation:

  1. 1. Sift all the flour into a large bowl. Pour vegetable oil into it.
  2. 2. Separately mix freshly squeezed citrus juice and drinking water. Pour granulated sugar (for dough) and salt into the resulting liquid. Mix the ingredients well until the sweet and salty grains are completely dissolved.
  3. 3. Add orange juice with all the additives to the flour and butter. Mix all ingredients well with a spoon. When it becomes difficult to do this with cutlery, start mixing the dough with your hands.
  4. 4. Grease a springform baking dish.
  5. 5. Add potato/corn starch and all the sugar to the berries.
  6. 6. Add selected spices to the filling. You can use others (instead of those indicated in the recipe) according to your taste.
  7. 7. Set 1/3 of the dough aside for decoration. Distribute the rest into the prepared pan.
  8. 8. Place berry filling or ready-made jam (approximately 1 cup) on top of the base with small sides.
  9. 9. Crumble the remaining smaller portion of the dough onto the pie directly with your hands. If you have free time, you can first freeze it and then grate it.
  10. 10. Preheat the oven to +190...+200 degrees. Place the future pie in it for approximately 35-45 minutes.

Cool the treat completely. Only then cut it into neat portioned pieces.

Simple and easy recipe with apples


Ingredients:

  • flour - 3 tbsp;
  • sugar - 0.5 tbsp. or a little more;
  • baking powder - 1 tsp;
  • vanilla sugar - 1 standard sachet;
  • egg - 2 pcs.;
  • large apple - 1 pc.;
  • apple jam - 1/2 cup;
  • margarine or butter - 250 g;
  • salt - 0.5 tsp.

Preparation:

  1. 1. Sift wheat flour through a sieve in advance. For this purpose, you can use a regular colander with very small holes.
  2. 2. Place the prepared flour into a large bowl. Add all the baking powder and salt to it. Mix the ingredients well with a spoon.
  3. 3. Add softened butter/margarine (200 g) to the future dough. Blend the ingredients with an immersion blender. You will get large crumbs.
  4. 4. Separately combine two types of sugar and raw eggs. Beat with a mixer/blender until light foam is obtained.
  5. 5. Send the egg mixture to the dough base. Mix the ingredients with a spoon or directly with your hands until smooth.
  6. 6. Divide the resulting dough into two unequal parts. Send both to the cold. They should freeze a little.
  7. 7. Take most of the dough out of the cold first. Coarsely rub it onto a small baking sheet completely lined with oiled parchment. Spread the crumb layer with apple jam.
  8. 8. Peel a whole apple and remove the seeds. Grind the remaining part using a grater. Spread over jam.
  9. 9. Cut the remaining butter/margarine into pieces. Spread them over the entire surface of the future pie. You can also add a little sugar to taste. This is especially true if the apple is sour.
  10. 10. Place the pie in the oven, preheated to +230 degrees. Cook it until browned.

The delicacy with baking powder turns out tender and crumbly. Therefore, it should be cut when it has cooled down.

Grated pie from childhood with meringue


Ingredients:

  1. 1. Divide the eggs into components. Pour the yolks into a separate bowl. Beat them, gradually adding half a glass of sugar (the rest will be useful when preparing the meringue).
  2. 2. Add softened butter to the mixture. Beat the ingredients again until fluffy and airy.
  3. 3. Quench baking soda with table vinegar. Add the resulting foam to the base of the dough.
  4. 4. Start gradually pouring sifted flour into the mixture. After each new portion, beat the mixture with a mixer/blender.
  5. 5. The resulting dough should not stick to your fingers. It needs to be divided into three approximately equal parts. Two - remove to freeze in the cold.
  6. 6. Beat the whites with the remaining sugar. Doing this manually will be problematic, so it is better to immediately start working with a mixer/blender.
  7. 7. Distribute the remaining soft part of the dough in an oiled round pan. Make small sides.

  9. 9. Chop the assorted nuts with a knife. If your family doesn’t like it when large pieces of nuts appear in baked goods, you can process them with a coffee grinder.

  • flour - 3.5 tbsp;
  • butter - 200 g;
  • sugar - 150 g;
  • eggs - 2 pcs.;
  • thick apple jam - 2/3 tbsp.;
  • walnuts - 15–20 pcs.;
  • soda - 1/2 tsp;
  • vinegar or lemon juice - 1 tbsp. l.;
  • salt - 1 pinch.

Preparation:

  1. 1. Pour all the sugar specified in the recipe into a bowl. Add the contents of raw eggs to it. Beat until thick foam forms.
  2. 2. Soften the butter in advance. Add soda to it, quenched with lemon juice or vinegar. Whisk the ingredients together.
  3. 3. Combine the masses from the first and second steps. Send the pre-sifted flour to them. Knead a stiff but elastic dough.

  • butter - 200 g;
  • vegetable oil - 5 tbsp. l.;

  • soda - 2 tsp;
  • currant jam - for filling (to taste).

Preparation:

  1. 1. Immediately pour all the flour into a deep bowl that is convenient for mixing ingredients. First sift it thoroughly.
  2. 2. Add granulated sugar and baking soda. To rid the finished pie of an unpleasant aftertaste, you can extinguish the dry product with citric acid/vinegar.
  3. 3. Pour vegetable oil into the dough. Both olive and sunflower will do.

  1. 1. Grind a chicken egg with granulated sugar. Add softened butter to the products. Mix everything well.

I use a classic recipe for shortcrust pastry for a pie, which has never let me down and it turns out really tasty and easier to prepare than others. There are a minimum number of ingredients, and they are all very simple. Also, there is no need for sour cream or kefir.

This recipe for shortbread pie with jam and crumbs can be made with any jam or preserves. I decided to add apricot, and for homogeneity I additionally blended it in a blender. The classic recipe for grated pie will come in handy if you need something tasty to make for tea. Even guests are not ashamed to serve this on the table.

Ingredients:

How to make grated pie with jam

So, first of all, I’ll show you how to make shortcrust pastry for a pie. Beat eggs into a mixer bowl and add sugar. I set the mixer to beat at medium speed, and at this time I melt the butter.

When about 3 minutes have passed and the mass has become fluffy, but not like thick foam, such a consistency is not needed, I add slaked soda and melted butter.

I stir and add the sifted flour. It is necessary to sift it in order to saturate it with oxygen and check for the presence of anything unnecessary in it.

First, I add only 100 grams of flour, and begin to knead it with a spatula, then another 100, and so on until I have poured it all out. As a result, the dough comes out soft, not dense, but I don’t recommend filling it with flour if you need delicate shortbread pastries.

Now about how to form a grated pie with jam. I divide the dough into 2 parts, but not equal, but large and small. For now I put the smaller one in the freezer in a bag.

I cover a baking sheet with parchment and place a large piece of dough on it, and then simply distribute it evenly with my hands to make it the same thickness everywhere. I don’t make sides, I don’t see the need for it.

Since I have grated shortbread with jam, namely apricot, but I only found jam, I simply pureed the required amount in a blender until smooth. Next, I distribute it evenly throughout the dough, just a little short of reaching the edges.

At this time, you can already turn on the oven to heat up to 180 degrees. I take the second part of the dough out of the freezer and grate it on a coarse grater, directly on top of the jam, but so that it is approximately even. I didn’t mix more flour into this piece and rubbed it like that, but I know that some people add flour to it to make it harder, because it froze just a little and it’s not very convenient to rub because of this. You do what is most convenient for you.

This is the simple and easy jam pie recipe I came up with. I bake it for about 20 minutes until golden brown.

Next, together with the parchment, I transfer it from the baking sheet to a cutting board and let it cool, after which I cut it into portions.

Its base turned out to be thin, which only makes it tastier.
