Before preparing sorcerers with minced meat, you need to make this very minced meat. We cut the meat and onion into medium pieces, that is, we prepare the ingredients to be sent to the meat grinder.

We skip everything once. For filling it is better to use a nozzle with medium holes.


Beat the egg into the minced meat, sprinkle with coriander, salt and pepper to taste. Mix thoroughly with your hands, passing it through your fingers. Add a tablespoon of sour cream, which will make the mass more tender. Mix well with a spoon and then leave it alone.

Sour cream can be replaced with melted butter. It will have the same effect.


Peel the potatoes and onions, rinse in cold water and cut into medium slices.


We install an attachment with small holes on the meat grinder and send vegetables into it. To prevent the potatoes from darkening, add a spoonful of sour cream.


Take gauze and squeeze out the potatoes in small portions. We don’t pour out the liquid, we will need it later.


It is important here not to overdo it and not to squeeze the potato mass too hard. Otherwise, Belarusian sorcerers, who should be very gentle, will turn out to be harsh.


While we were squeezing the potatoes, starch settled to the bottom of the container with liquid. Carefully drain the juice and add the sediment to the potatoes.


Beat the egg into the potato mixture, add salt and pepper and mix well.


We make sorcerers with our hands. We make a potato cake, add the minced meat filling, cover with the mixture and form a cutlet.


First we make blanks, after which we will proceed to their further processing. We mold carefully, the potato mass is very tender.


Dredge each cutlet in flour.


We send the pieces to fry in vegetable oil over high heat. If we don’t plan to bake it afterwards, then turn the heat to medium.


Fry the sorcerers on all sides until appetizingly browned, as in the photo.


Transfer to a cauldron or cauldron.


Fill with water so that the potato pies are half in the water. Pour over sour cream and place in a cold oven. Sour cream can be replaced with cracklings and fried onions. Turn on the oven at 220°C for 5 minutes to warm up the container. Then reduce the temperature to 180°C and bake for 40 minutes.


When all the water has boiled away and the sour cream is baked, remove the cauldron from the oven.


Appetizing potato sorcerers with juicy minced meat are ready!


Recipe sorcerers with meat:

Peel the raw potatoes and grate them on a fine grater. In some recipes of Belarusian sorcerers, potatoes are boiled “in their skins” in advance, and then peeled and grated. In this case, there is no need to bake fried sorcerers in the future.


To prevent raw potatoes from darkening, first chop the onions to an onion pulp and immediately add them to the grated potatoes, stir so that the potatoes are saturated with onion juice.


Squeeze out the raw potatoes and drain the resulting liquid, leaving a starchy layer (usually it settles to the bottom of the dish) in the potato mixture.


For plasticity, add flour, salt and egg to raw or boiled potatoes.


Prepare minced meat: grind the meat in a meat grinder, add salt, season with black pepper and add finely chopped onion, mix thoroughly with your hands.


Heat vegetable oil in a frying pan, form not very thick (0.5 cm), round or oval cakes, place them in the frying pan. Reduce the heat on the stove so that the cakes do not burn while you form the sorcerers.


Make flat cakes of the same shape, but slightly smaller in size, from minced meat, and place them on the potatoes in the center.


Cover the meat with another potato cake, pressing its edges to the first one.


Now the sorcerers with meat can be turned over and fried on the other side until a golden, delicious crust.


When all the sorcerers are fried, transfer them to a baking dish and place in a hot oven (200 degrees) for 20-30 minutes. You can immediately add sour cream to the sorcerer mold, or you can make sour cream sauce separately.


To prepare sour cream sauce for sorcerers, mix sour cream, chopped herbs, garlic squeezed through a press, salt and spices. Stir and transfer to a gravy boat.


Hot, piping hot, crispy sorcerers and with sour cream sauce - it's delicious!

Potato sorcerers with minced meat are a traditional dish in Belarus. Prepare from the simplest ingredients.

You can use any minced meat (pork, beef), we used a homemade mixture of pork and chicken.

Minced meat is a traditional filling, but you can use any other one, for example, chicken breast, fish, stewed liver, mushrooms

For those who like a crispy crust, we recommend grating the potatoes on a coarse grater; this not only makes it tastier, but also makes it easier to sculpt. But back to our sorcerers, there are two options for sculpting sorcerers:

the second - immediately laying it out in layers on the frying pan
We prefer the second one, since our hands are cleaner and there is less fuss.

It is not necessary to cook sorcerers in a frying pan; you can use both an oven and a slow cooker in the “baking” mode for these purposes.

Preparation

Cooking minced meat

Sorcerers– one of the most delicious dishes of Belarusian cuisine. They are prepared from meat and potatoes; it is always tasty, satisfying and very unusual. Potato cutlets stuffed with minced meat - this is the recipe my sister Ekaterina shares with us. She prepared these excellent sorcerers for her family for dinner. Everyone was left full and happy. Your children will especially like these potato sorcerers, because many kids are very picky about food. But the potato wizards definitely eat every last bite.

Required:

  • Potatoes – 5 pcs. (large)
  • Minced meat (ready homemade) – 500 gr. (pass the meat through a meat grinder with onion and garlic, add the egg, mix. Salt and pepper to taste)
  • Egg – 2 pcs. (in the photo there is 1 egg, another one was added during the cooking process)
  • Sour cream (20%) – 200 ml.
  • Salt - to taste.
  • Ground black pepper - to taste.
  • Sunflower oil - for frying sorcerers.
  • Water (or broth) – 100-200 ml. (if necessary)

How to prepare delicious homemade sorcerers:

  1. Grate the potatoes on a coarse grater. Add eggs. Knead.
  2. We begin to form potato and meat cutlets. Place a potato cake on your palm. Place a piece of minced meat on it. And completely cover the minced meat with the potato mixture.
  3. Place the finished semi-finished products in a frying pan with heated sunflower oil and fry on both sides until golden brown.
  4. Add a couple of spoons of sour cream to a deep frying pan or saucepan and lay out the finished sorcerers in layers, coating each layer with sour cream.
  5. You can add a little salt and pepper layer by layer to your taste. So we lay out all the sorcerers. If the sour cream is too thick, you can add a little water or ready-made broth. Salt to taste.
  6. Place the frying pan (saucepan) over medium heat and when the sorcerers boil, simmer them under the lid for 35-40 minutes until fully cooked.
  7. When the cooking time for the meat sorcerers is up, place them in portions on a plate; you can top them with the sauce in which they were cooked or with sour cream.
  8. If desired, decorate with greenery. You can serve any cereal, mashed potatoes or pasta as a side dish. My sister served sorcerers as a separate dish without a side dish. Everyone was left full and satisfied, young and old. Read more:

Recipe for Belarusian sorcerers

Ingredients:

  • Raw potatoes - 500 g.
  • Wheat flour - 0.5 cups
  • Table egg - 1 pc.
  • Onion - 1 pc.
  • Greens - 20 g.
  • Garlic cloves - 2 pcs.
  • Ready seasoning - 1 teaspoon
  • Minced meat - 400 g.
  • Sour cream - 200 ml.
  • Ghee butter - 50 g.
  • Water - 100 ml.
  • Salt - - to taste
  • Black pepper - - to taste

Preparation:

  1. Take a fairly large potato (preferably with a high starch content) and peel it.
  2. Grate the potatoes on the finest grater or chop them in a food processor.
  3. Squeeze the resulting potato mass through a sieve over a bowl or using gauze folded in two layers. The result is a moderately moist mass.
  4. Do not pour out the potato juice immediately, but leave it in a bowl and let it settle.
  5. Cut a piece of meat into pieces that are convenient for rolling in a meat grinder.
  6. Peel the onion and cut it.
  7. Grind the meat and onions through a meat grinder.
  8. Chop the herbs and garlic and add to the minced meat.
  9. If desired, season the minced meat with the prepared aromatic mixture, add salt and pepper.
  10. Add a little water to the minced meat and knead it well.
  11. Carefully drain the potato juice that has settled in the bowl.
  12. Add the remaining starch to the potato mixture and add salt.
  13. Add flour to grated potatoes and beat in egg, mix well.
  14. It turned out two masses - potato and meat - for the formation of sorcerers.
  15. Divide the potato mixture into equal portions of about 55-60 grams each.
  16. Take turns forming each portion into a flat cake on your palm.
  17. Place about a heaping teaspoon of minced meat onto a potato cake.
  18. Connect the edges of the flatbread with the minced meat to form a cutlet.
  19. Form all the cutlets in a similar manner.
  20. Heat a frying pan with ghee.
  21. Place the cutlets, flattening them a little, onto the frying pan.
  22. Fry the cutlets on both sides for 10 minutes (you can cover them with a lid for a while).
  23. Place the fried cutlets in a saucepan or other deep container. Pour them with broth or thin sour cream sauce. Add salt and simmer for about 20 minutes. Can be baked in the oven.
  24. Place the finished sorcerers on portioned plates and serve as an independent dish with sour cream, herbs, and vegetables.
  25. As an option, you can complement the sorcerers with vegetable salad.

Sorcerers

Sorcerers - ingredients:

  • Potatoes - 1 kg
  • Minced meat (pork-beef) - 250 g

  • Breadcrumbs - 4 tbsp. l.
  • Chicken egg - 2 pcs
  • Cheese (hard) - 100 g
  • Vegetable oil - 50 g

Sorcerers - preparation:

  2. Add salt, pepper, 2 eggs and flour to the potatoes until the dough sticks to your hands, it took me a little more than a glass. Divide the dough into balls, roll them into flat cakes, and place the minced meat on them. I made large sorcerers, I got 12 pieces from this proportion (2-3 pieces per serving), you can make smaller ones.
  3. That's it, incredibly delicious are ready! Bon appetit!

Sorcerers with meat

To prepare sorcerers we will need such Ingredients:

  • Potatoes – 1–1.5 kg
  • Minced meat – 0.5–0.8 kg
  • Eggs – 3 pcs.
  • Vegetable oil
  • Salt, bay leaf, pepper to taste

Recipe for making sorcerers with meat:

  1. We start preparing our dish by peeling the potatoes. Then grate it on a fine grater or using a food processor.
  2. It is better to squeeze out excess liquid. Add eggs, salt and pepper to the potatoes to taste.
  3. You can also add salt and pepper or any other spices to your taste.
  4. We take a small lump of grated potatoes and form it into a flat cake, in which we wrap a piece of minced meat.
  5. We do this until the potatoes and minced meat are used up.
  6. Fry each sorcerer in vegetable oil on both sides until golden brown.
  7. Place the fried sorcerers in a duck pot and simmer until tender over low heat for 20 - 30 minutes (depending on the size of each).

  2. Grate on a coarse grater.
  3. While the potatoes are cooking, finely chop the onion and fry in vegetable oil.
  4. Add breadcrumbs and fry until golden brown.
  5. Add minced meat, salt, pepper, seasonings for the meat as desired, fry until the minced meat is ready (I did it for about 15 minutes).
  6. Add salt, pepper, 2 eggs and flour to the potatoes until the dough stops sticking to your hands, it took me a little more than a glass. Divide the dough into balls, roll them into flat cakes, and place the minced meat on them. I made large sorcerers, like the author, I got 12 pieces from this proportion (2-3 pieces per serving), you can make smaller ones.
  7. We pinch the edges as if we were making dumplings.
  8. Place in boiling salted water, as much as will fit across the width of the pan, moving it a little so as not to stick to the bottom. From the moment it floats to the surface, cook for 10 minutes. Remove, pour melted butter and sprinkle with grated cheese.

Sorcerers This is a Belarusian potato dish that has a huge number of cooking methods, traditional sorcerers are somewhat similar to fried ones in a frying pan, but today I want to present this dish in a new version. The name is lazy, rather because I will be preparing this dish in the oven, regular readers have already understood how much I adore working with the oven, I planed everything onto a baking sheet, poured sauce or coated it with mayonnaise and that’s it - the perfect dinner is ready, while the kitchen is clean and hands free smeared.

Lazy sorcerers A completely independent and satisfying dish, it does not need a side dish, just a salad of fresh vegetables. They look like meatballs, but they taste completely different, unlike anything else, very juicy and incredibly tasty.

To prepare you will need:

  • Potatoes -0.6 kg.
  • Carrots - 1 pc.
  • Onion - 1 piece (large)
  • Minced pork, beef -400 gr.
  • Egg - 2 pcs.
  • Flour -2 tbsp
  • Cheese -100 gr.
  • Cream -200 gr
  • Tomato juice -100 g or 1 tbsp. spoon of tomato paste
  • Garlic - 1 clove.
  • Salt, pepper and spices to taste.

Peel the vegetables and rinse under running water. Three on a coarse grater, chop the onion finely, you can grind it using a blender. Add the minced meat, break the eggs there, add salt and pepper, sift a little flour there and don’t forget about the spices, mix everything,
We make sorcerers from the resulting minced meat. Place them on a baking dish or baking sheet with deep sides. In a deep cup, mix the cream with tomato juice, add a little salt and squeeze out a clove of garlic.
Dry garlic can be added if desired. Pour sauce over lazy sorcerers
and sprinkle grated cheese on top.
We send everything to bake in the oven for about an hour at 180 degrees.
