Making chicken balls is quick and easy. Ruddy balls “in the heat of the heat” delight not only the stomach, but also the eye, they look appetizing and pretty, and go with almost any side dish (however, they are also eaten with a bang even without a side dish). In short, if you have once again bought chicken fillet or minced chicken and are wondering what to cook with it, try this recipe!

Need to:

  • Minced chicken - about 800 grams (it is better, of course, if possible, to grind it yourself from chicken fillet, but you can buy ready-made)
  • Onion – 1 medium sized onion
  • Chicken egg – 2 pieces
  • Garlic – 3-4 large cloves (this is optional, if you don’t want it, don’t add it)
  • Cream - 200 milliliters, that is, a glass (the fat content of the cream is at your discretion, it seems to us that 10-11% is quite enough)
  • Cheese (any hard variety to your taste) – about 200 grams
  • Table salt - approximately 1.5 teaspoons
  • Ground black pepper - to taste (well, on the tip of a teaspoon, about a quarter of a spoon, but, you understand, no one usually puts pepper with a spoon, it’s more convenient to shake the pepper shaker several times, or even better, twist the mill)
  • Margarine or butter - 10-15 grams, to grease the baking dish
  • Fresh herbs (dill, parsley, cilantro and your other favorites) - if desired, sprinkle the finished dish on top with finely chopped herbs, which will certainly improve both the appearance and taste

Preparation:

Peel the onions and chop finely. Add chopped onion to the minced meat. Add salt, pepper and mix everything until smooth.

Beat the eggs until lightly foamy (with a mixer or a whisk, or, in extreme cases, just a fork), add the eggs to the minced meat and mix everything thoroughly again. For the convenience of further work, you can divide it into parts (we usually get 9 balls from this amount of minced meat, let’s not say that they are small).

Grease a baking dish (you can use a deep baking tray, but it will be too large for this amount of minced meat) with margarine or butter.

Using hands dipped in cold water so that the minced meat does not stick, we form, sculpt balls and place them in a greased form at some distance from each other, not close together ( watch our video recipe!).

Preheat the oven to 200-210 degrees (medium heat level or slightly higher), place the pan with balls on a baking sheet or on a wire rack at medium height and bake for 15 minutes. ATTENTION! Again and again! If the mold is glass, put it in a cold oven, then turn on the heat and increase the time spent in the oven by 10-15 minutes (this is how long the oven usually warms up).

While our chicken balls are baking in the oven, grate the cheese on a not very coarse grater, or even a fine one.

Crush the garlic in a special “masher” or chop it very, very finely and add to the grated cheese, mix. Pour the cream into the cheese and garlic and mix everything again.

We take the pan with the already slightly baked chicken balls out of the oven and generously pour cheese and cream sauce over each ball (immediately, don’t wait, don’t let it cool). And immediately put the pan back into the oven and bake for another 15-20 minutes.

Chicken fillet balls are a wonderful dish that is universal, that is, suitable for any occasion. The dish can be served as an addition to lunch (instead of salad).

This version of the dish is distinguished by a harmonious combination of different ingredients. Ground red pepper gives it a pleasant, slightly spicy taste. To prepare this snack you need the following products:

  1. Half a kilo of chicken.

Chicken balls with cheese and nuts

To prepare this dish you need the following products:

  1. Walnut kernels (100 grams).
  2. Two pieces of chicken meat.
  3. 200 grams of cheese.
  4. Four olives.
  5. A little dill.
  6. 100 grams of walnut kernels.
  7. 2-3 cloves of garlic.
  8. A small amount of table salt, mayonnaise sauce and ground pepper.

Boil the chicken and let the meat cool slightly. Then grind it. Place chicken pieces in a large bowl. Grind the cheese and mix it with the meat. Add crushed garlic cloves. Wash the greens and dry well. Grind it and mix with all other products. Place salt, ground pepper on a plate and grate the walnut kernels. Make circles from the resulting mass. This dish is also called “Chicken Raffaello”. Indeed, in shape and appearance this treat resembles the famous candies. To prepare chicken balls with cheese (with the addition of prunes), you will need the following ingredients:

  1. 150 grams of walnut kernels.
  2. 200 g mayonnaise sauce.
  3. About half a kilogram of chicken.
  4. 200 grams of hard cheese.
  5. 300 g coconut flakes.
  6. Fresh mushrooms (150 grams).
  7. 100 g dried plums.

Boil the chicken and grind it using a meat grinder. Place a little table salt and ground pepper into the meat. Cook mushrooms over a fire with the addition of refined vegetable fat. Grind hard cheese. Place it in a bowl with chicken. Place the cooked champignons there. Mix all ingredients with mayonnaise sauce. Make circles from the resulting mass, in each of which put a small nut kernel and a dried plum. Cover them with coconut shavings.

From salted and seasoned minced chicken, we form medium-sized balls/meatballs, approximately the size of a nut. It is more convenient to do this with wet hands. The minced meat will be tastier and juicier if you prepare it yourself by passing the chicken fillet through a meat grinder.

Now generously roll the balls in wheat flour and transfer them to a bowl with a beaten chicken egg. Roll the balls in the egg mixture, then again in flour. This lezon, together with breadcrumbs, will create a wonderful crispy and tasty crust.

And the last stage of breading is fine crackers. Sprinkle the balls several times and place them in boiling sunflower oil over moderate heat. In just a minute or two, the balls will be fried on all sides. Remove them with a slotted spoon; you can place the balls on a paper towel to remove excess fat.

It’s very easy to make your own chicken balls with cheese at home. You can either fry them in a frying pan or bake them in the oven, but their taste will not change at all. But this option is suitable for those who do not like to fry food in large amounts of oil.

Preparation

  • It is advisable to choose fresh chicken fillet, not frozen, as in this case the minced meat will be more juicy. Rinse the breast and trim off the film and fat, then pass the meat through a meat grinder. Peel the onion, cut into large cubes and also pass through a meat grinder. You should do the same with garlic, but if the cloves are very small, it is better to chop them using a garlic press.


  • Place the crushed ingredients in a common deep container, then add fresh chicken eggs, ground black pepper and salt to taste. Try not to over-salt the minced meat; remember that the filling will also be salty due to the cheese.


  • Mix the minced meat thoroughly and then try to form it into a ball. If it is too runny or doesn't hold its shape, add just a little breadcrumbs or bread crumbs. Then you need to prepare three small deep bowls in which you need to place flour, beaten chicken egg and breadcrumbs, respectively.


  • Start forming meat balls with cheese filling. To do this, scoop up some minced meat with a spoon, knead it in your hand to make a flat cake, and add a small piece of cheese. Pinch the edges and then roll the minced meat into a ball.


  • Dip the meat ball first in flour, then into the egg mixture, and then into a bowl of breadcrumbs. Do this action with all the chicken balls, placing them on a wooden board.


  • Take a frying pan or cauldron with high edges, pour in a lot of oil so that when frying it covers the meat balls by at least half, and put on the fire, waiting until the oil boils. Ingredients

  • Boiled chicken fillet – 450 g;
  • Boiled chickpeas – 200 g;
  • Soft curd cheese (or ricotta) – 60-80 g;
  • Dried herbs: dill, parsley, marjoram, mint, basil (to taste);
  • Spices - to taste;
  • Garlic powder (unless it is included in the spices) – ½ tsp;
  • Salt.

Preparation

  1. Soak the chickpeas in water in advance, preferably overnight. I left it in water for almost a day - it swelled 3 times and quickly boiled. Then cook over medium heat for 1 hour.
  2. Boil and cool the chicken fillet, cut into small pieces. Grind with a blender until smooth. Fillet is difficult to grind, so you can add liquid to the blender (for example, strained broth remaining after cooking or boiled water).

Important note! The mass should be thick and mold well, so watch the volume of liquid added.

  1. Puree the boiled chickpeas in a blender as well.
  2. Mix chicken and chickpea puree, add soft cheese, salt and mix thoroughly until smooth.
  3. Form balls and roll them in spices mixed with herbs and garlic powder. Serve warm.

It is better to accompany the balls with sauce, for example:

  • low-fat sour cream,
  • tomato sauce,
  • soy sauce mixed with lemon juice,

This recipe was born spontaneously, so after cooking I began to have ideas on how to change or improve the recipe. Here are a few ideas to consider:

  1. Roll the balls not only in herbs with spices, but also in chopped walnuts. You can put a whole nut kernel in the center.
  2. In general, such balls will play perfectly with the filling: it can be cheese, vegetables (for example, cucumber or bell pepper), sun-dried tomatoes, boiled and grated beets with garlic.
  3. They can also be lightly fried in a dry frying pan to create a crispy crust.
  4. Another option is to make a baked dish. Place the balls in a mold, separately mix 2 eggs, a little milk, a little grated cheese and a little flour (whole grain) or corn starch (although you can do without flour, it will be more dietary), salt, spices and pour this dough into the balls. I'm sure this casserole will turn out very tasty.
