Cooking steps

Wash the potato tubers, peel them and cut them into half rings 3-4 mm thick.

I found this recipe called “Mediterranean-style sausages with vegetables” on the Domashny Ochag website. And I was fascinated by the richness of colors and ease of preparation! I adjusted a few things, added a few things of my own (for example, instead of olives I took bell peppers, and added turmeric and dried basil to oregano), and lo and behold, in half an hour a hearty dinner was ready for the whole family! And since the portion is large, there is also breakfast.


Ingredients:

  • 8-10 medium potatoes;
  • 8 sausages;
  • 2-3 sweet bell peppers;
  • 1-2 tomatoes;
  • 1 onion;
  • 1-2 cloves of garlic;
  • 0.5 teaspoon of oregano (oregano);
  • 0.5 teaspoon of basil;
  • ¼ teaspoon turmeric;
  • 0.5 tablespoon of mustard;
  • 0.5 teaspoon salt (or to taste);
  • 1/6 teaspoon ground black pepper (or again to taste);
  • 2 tablespoons of vegetable oil (olive, if you want a more “Mediterranean taste”, but sunflower is also possible);
  • Fresh dill, parsley.

Instructions:

Peel and wash the vegetables. Cut the potatoes into cubes or cubes, as for fries. In the original recipe, the potatoes were pre-boiled, but I decided to fry them, as in the “Baked Potatoes with Pumpkin” dish - remember when we recently prepared this delicacy? So, heat a spoonful of olive oil in a frying pan, add the chopped potatoes and, stirring occasionally, fry for 4-5 minutes.


Meanwhile, cut the onion and bell pepper into rings. We do not touch the tomato and garlic yet. We will add them later, since tomatoes are tender and bake quickly, and it is better to add garlic to an already prepared dish - otherwise, being added to raw ingredients and baked with them, garlic risks giving a not very pleasant aftertaste.


Preheat the oven to 200C.

Grease a spacious mold with high sides with olive oil, remove the potatoes from the pan, add bell peppers, onions, sausages, spices and seasonings - salt, ground pepper, herbs and mustard. Mix everything and place on the middle level of the oven, where we bake for 25-30 minutes. No need to cover. When the potatoes become soft (check with a wooden skewer), add the tomato cut into thin slices and continue baking for another 5-10 minutes. Meanwhile, chop the washed herbs and garlic (you can put it through a press or grate it on a fine grater, or simply cut it into slices).


Taking the pan out of the oven, sprinkle the baked potatoes with sausages with herbs and garlic, sprinkle with olive oil and immediately, hot, serve to the table with salad and slices of bread.
