I offer a simple recipe for fragrant homemade pastries - rye cakes. They are extremely tasty not only thanks to rye flour, but also by adding brewed rye malt. You can serve such flat cakes not only for the first courses, but also make sandwiches with them or just use them as a snack.

The recipe of this simple and tasty bread includes two types of flour - rye and wheat. By the way, rye flour is suitable as wallpaper, and seeded or peeled, and wheat flour, use any kind. If desired, the billet for rye cakes can not only be smeared with egg yolk, but also sprinkled with cumin seeds, flax, coriander, seeds, or sesame seeds.

Ingredients:

For the preparation of fragrant rye cakes, we need two types of flour (rye and wheat of any kind), water, rye malt, salt, granulated sugar, high-speed yeast, refined vegetable oil and egg yolk to lubricate the blanks. If you do not use the yolk, the cakes will turn out to be lean (they can be eaten during Lent). Yeast is not necessary to take high-speed ones - just dry (3 grams too - this is a teaspoon without a slide) or pressed (you need to be 3 times more, that is, 9 grams) are perfect. Such yeast is not immediately mixed with flour, but is pre-activated in a warm, sweetish liquid for 10-15 minutes.



Rye malt can be introduced into the dough in two ways: dry and brewed. It is believed that in the second case, the finished baking is more fragrant, although I did not particularly notice this. So, brew the malt. To do this, we pour it in a suitable dish and fill it with 100 milliliters (we take from the total volume) of boiling water. Mix thoroughly and allow to cool to a slightly warm state.





Add salt, sugar and high-speed yeast. All thoroughly mixed, to dry ingredients evenly distributed throughout the volume.





Mix the products first with a spoon or fork, and when the flour is moistened, add a tablespoon of any odorless vegetable oil.

Whole grain rye flour is much more useful than wheat flour and contains more amino acids necessary for our body, and the dough rises out of it without any yeast, if you use any homemade leaven. But we will manage without her, we will cook from the fact that any hostess can find in her fridge, and bake healthy and tasty rye cakes on kefir.

Ingredients for making rye cakes on kefir:

  1. Flour rye (wholegrain)  300 grams
  2. Kefir (from 1% fat)  350 grams
  3. Salt 1 tsp
  4. Ground dried coriander  1 teaspoon
  5. Vegetable oil (sunflower or olive)  1 teaspoon
  6. Soda 1 tsp.

Preparation of rye cakes on kefir:

Step 1: Knead the rye dough on kefir.

In a large bowl, mix the kefir and vegetable oil, whipping them with a fork to a uniform consistency. In a deep bowl, mix the rye flour, salt, coriander and soda.
Make a well in the flour and pour the kefir mixed with butter into it. Start kneading dough with a tablespoon. Mix everything until you get a sticky homogeneous mass. Close the resulting dough with cling film so that it does not become chapped, and let stand, rest for   20 minutes.

Step 2: Bake rye cakes.




Oven put warm up to 200-220 degrees  Celsius, but for now form the cakes. And you can do this in a variety of ways. You can put the dough on a floured tabletop, roll it out with a rolling pin and a glass or a cup to cut out round cakes, just like cutting cookies. After that, the remnants of the dough are collected and rolled out again. For convenience, you can initially divide the dough into two parts and work with each of them separately.
And there is another way more simple. First, take a baking sheet, spread baking paper on it, sprinkle it with flour and place a little dough. Roll the mixture in flour, get the ball, and then just flatten it with your hand and start forming the next cake.
No matter what method you choose, at the end of your cakes should lie on a baking sheet, on top of which spread out baking paper, sprinkled with flour. Puncture the products with a fork and send everything into the preheated oven to 15-20 minutes.
Finished flat cakes do not rush to remove from the pan, let them cool, and after that shift to the breadbasket or serve to the table.

Step 3: Serve rye flatbread.




Rye cake with kefir is a great alternative to bread, so they should be served accordingly. Make sandwiches from them, cut them in half and brush with butter or just offer them to the soup. In any case, it will be very tasty and useful.

Next, take out the finished dough, sprinkle lightly with flour and form a log, which is cut into 6 pieces. We make flat cakes from each billet and roll out a little with a rolling pin. Ingredients:

  • rye flour - 305 g;
  • soda and salt - 5 g;
  •   - 20 ml;
  •   - 345 ml.

Cooking

Before you start cooking rye cakes without yeast, mix all the dry ingredients in a bowl. Separately, combine butter with kefir. After that in small pieces, sifting, pour dry into the liquid mixture, knead the sticky dough and leave it alone for 20 minutes. Sprinkle the surface of the table with rye flour, spread the dough with a spatula and roll it out with a thickness of 1 centimeter. Next, cut out with the help of an ordinary glass circles and transfer them to a baking sheet, covered with paper. Then we pierce each billet with a fork and bake rye flat cakes without yeast in a preheated oven for 15 minutes. To taste, the finished products resemble bread humps and are best served with grated cheese.

Fans of healthy eating have long abandoned wheat flour and yeast. They easily replaced the usual store bread with tasty and fragrant rye cakes, which can be easily and quickly cooked in their kitchen. Such flatbreads are also called “live bread”, because they are really very healthy, low-calorie and incredibly tasty.

Steps for making rye cakes without yeast:

  1. Mix the rye flour, salt, coriander and soda.
  2. Separately, in a bowl, mix kefir and olive oil.
  3. Gradually we begin to add rye flour to kefir, stirring constantly, so as not to form lumps.
  4. The result is a sticky, sticky dough. It must be set aside for twenty minutes to release gluten.
  5. After the dough is standing and slightly thickened, we generously sprinkle the working surface with rye flour and use a spoon to spread small cakes on it. Roll them out, giving the desired shape.
  6. To flatbread turned out smooth, you can roll out all the dough and cut into circles with a glass.
  7. Baking we covered with parchment and spread on it ready cakes.
  8. Using a fork, we make several punctures on the surface of the dough.
  9. Put the oven baked in the oven to two hundred degrees and bake for twenty minutes.

Such rye tortillas are very tasty, both hot and cold. They are great with cheese, vegetables and fish.
