Regular white cabbage is in any refrigerator, or you can buy it at any time of the year. In any case, a tasty and healthy breakfast is guaranteed.

It is difficult to say whether cabbage pancakes are a vegetarian dish, since they contain eggs. And, to be honest, the most delicious cabbage cutlets with fresh sour cream. But, as it turned out, even the classics Ilf and Petrov cheated with the “false hare.” This is not a vegetarian dish at all, but is prepared from pork with bread and other additives. Therefore, call it whatever you want, the amazing taste of the dish will not change.

By and large, pancakes are the closest relative of potato pancakes, which are made from potatoes. Everything is almost exactly the same, although there are some very significant subtleties. , which we always prepare in the summer, or autumn - a very similar technology, there is nothing complicated. The important thing is that all the ingredients are available and cooking does not take much time.

The usual white cabbage is one of the main vegetables that have been grown since ancient times. Cabbage contains many vitamins and minerals that the body needs. For example, it is a good source of B vitamins. Fresh cabbage contains a lot of coarse fiber and fiber, which has a beneficial effect on digestion. It is noteworthy that cabbage does not require heat treatment, and cabbage pancakes retain all the beneficial properties with very little frying.

A special type of cabbage is young cabbage. Frankly, when I was little, I thought that young cabbage and “old” cabbage were different vegetables. In ancient times, young cabbage was considered a delicacy and was served at the festive table. The elastic and crispy leaves are exceptionally suitable for making cabbage pancakes.

To make cabbage pancakes for breakfast for two, all you need is half a small head of young cabbage. However, “old” cabbage is also perfect. It is important that the cabbage is not limp and dry. For the dish, in addition to cabbage, you need eggs and flour, spices and vegetable oil. And only half an hour of your time.

  • Young cabbage 0.5 heads
  • Egg 2 pcs

  • Salt, black pepper Spices
  • Fresh sour cream, herbs To submit
  1. The most delicious pancakes are made from young cabbage - it is more tender and juicy. Although, when young vegetables are not in season, any cabbage will do - white, red or Savoy. If the top leaves of the cabbage are damaged or dry, it is better to remove them. By the way, removing it to cook delicious ones is as easy as shelling pears - it’s easily done under running water.

    Head of young cabbage

  2. Cut the cabbage in half. If cabbage pancakes are being prepared for two, one half can be wrapped in plastic and placed in the refrigerator. You can make amazingly delicious food from it. Chop the other half, or better yet, chop and further chop with a knife so that all large pieces of cabbage disappear. The chopped cabbage will be almost dry. Do not grind the cabbage with a blender or meat grinder - there will be a lot of liquid.

    Finely chop the cabbage

  3. Season the chopped cabbage with salt and black pepper. Gently and lightly knead the cabbage with your hands and let it stand for 2-3 minutes until the salt dissolves. Add the contents of the eggs to the cabbage and stir with a fork. Eggs, thanks to their protein, perfectly hold cabbage pancakes together during frying.

    Salt, pepper and add eggs

  4. Add 1 tbsp to cabbage. l. wheat flour (with top) and mix thoroughly. We must try to completely eliminate lumps of dough and flour. But, as experience shows, with a small amount of flour there will be no lumps.

Add a spoonful of flour and stir

  5. You may need a little more flour. But, in the end, the mass for cabbage pancakes should have the consistency of.

    Thick cabbage mixture for pancakes

  6. In a large frying pan, heat 3-4 tbsp. l. vegetable oil. You can use any oil - olive or sunflower, it doesn’t matter. The oil should heat up very well and a faint white smoke should appear. Natural oil contains many additives and has a noticeable specific odor, which disappears after heating the oil to a high temperature.
  7. Using a regular tablespoon, place the cabbage mixture into the heated oil. One spoon of cabbage mass is equal to one cabbage pancake. Cabbage pancakes are the same size as, and just as “shaggy” due to the rather coarse particles of cabbage. This has a certain charm. The cabbage mass in hot oil does not spread at all, therefore, you need to slightly press down the laid out pancakes so that they become a little thinner.

Place a tablespoon of cabbage mixture into the heated oil.

  8. Fry cabbage pancakes over medium-low heat without covering the pan with a lid. Depending on the thickness, frying time on each side can be up to 5 minutes. Once the bottom side is browned, flip the pancakes with a fork and cook on the other side. The pancakes should be baked and completely ready. Additionally, there is no need to fry them under the lid, they will get soggy.

The finished pancakes should be golden brown and crispy.
