    • pork, beef or mixed minced meat - 300-400 g;
    • potato tubers - 1 kg;

    Preparation

    1. Whisk milk and eggs in a separate bowl, add salt, sugar and beat with a mixer. Gradually, without stopping whisking, add flour. Beat until all lumps are completely broken up and the batter is smooth.
    2. Add sunflower oil to the dough and stir.
    3. Using a ladle, pour the dough onto a hot frying pan greased with lard or vegetable oil and fry the pancakes for about a minute on each side.
    4. Boil the peeled potatoes in slightly salted water, crush with a masher.
    5. Cut the peeled onion into small cubes and fry in oil until golden brown.
    6. Add minced meat to the onion, fry until tender, add salt and pepper. Mix the prepared minced meat with mashed potatoes.
    7. Place a strip of filling on each pancake and wrap it in the form of a tube or envelope.

    These pancakes can be a separate dish, or you can serve them as a side dish for borscht or other appetizer soup.

    Pancakes with potatoes in meat gravy with mushroom sauce

    An original recipe, perfect for the holiday table.

    Ingredients

    • water - 400 ml;
    • sunflower oil - 50 ml;
    • flour - 300 gr;
    • sugar - to taste;
    • salt - two thirds of a teaspoon;
    • chicken egg - 3 pcs.;

    For filling

    • potato tubers - 5-6 pcs. (500 gr);
    • margarine, seasonings, salt, pepper - optional;

    for meat gravy

    • beef fillet - 500 gr;
    • allspice peas - 5 pcs.;
    • bay leaf - 4 pcs.;

    for mushroom sauce

    • flour - 4 level tablespoons (100 g);
    • onion - 1 head (100 g);
    • meat broth - 0.5 l;
    • champignons - 600 gr.

    Preparation

    1. Place the beef fillet on the fire to prepare the broth. At the end of cooking, add pepper, salt and bay leaves to the broth.
    2. Remove the meat from the broth, let it cool and disassemble into fibers.
    3. Strain the broth.
    4. Cut the mushrooms into slices, and the onions into cubes.
    5. Fry the chopped onion in a frying pan until tender, add the mushrooms and fry everything together. Add meat, pour in broth, add flavorings to the sauce if necessary.
    6. When the broth boils, add flour to it and stir the sauce until smooth.
    7. Peel and boil the potatoes. When the water boils, add salt.
    8. Drain half of the remaining cooking water, add pepper, margarine, and crush the potatoes with a masher.
    9. Grind the eggs with salt, add sugar and butter. Add warm water, stir.
    10. Pour the resulting mass into the flour, stirring constantly to obtain a homogeneous liquid mass.
    11. Grease a frying pan with lard or vegetable oil and fry pancakes.
    12. Wrap the filling in the prepared pancakes and serve with meat and mushroom gravy.

    If you knead the dough for pancakes with potatoes, its taste will give the finished product originality. The meat filling goes perfectly with the potato dough.

    Preparation

    1. Grate the peeled potatoes, mix and add salt. After 5-6 minutes, squeeze out the released liquid, add eggs and one finely chopped onion, and if necessary, pepper.
    2. Stir flour into potato mixture. The dough should be of normal pancake consistency.
    3. Bake regular pancakes in a frying pan, frying them on both sides.
    4. Fry the minced meat in a frying pan, add seasonings to taste and salt.
    5. Wrap the filling in the pancakes.

    These pancakes are best served hot.

    Sorcerers or potato empanadas

    Sorcerers are a traditional dish of Lithuanian cuisine. Potato sorcerers are best made from new potatoes.

    Ingredients

    • potatoes - 1 kg;
    • egg - 2 pcs.;

    • chicken fillet - 0.5 kg;

    • chicken egg - 1 pc.;
    • spices for meat, sour cream.

    Preparation

    1. Grind the potatoes and onions in a food processor or grate them.
    2. Add eggs, flour and seasonings to vegetables. Mix everything.
    3. Make minced chicken, add finely chopped onion, egg and seasoning. Mix.
    4. Pour vegetable oil into a heated frying pan, place a potato pancake, put the filling on top and cover with another potato pancake.
    5. Fry the pancakes on both sides.
    6. Place the fried pancakes in a casserole dish, pour in a little water, and simmer for about 20 minutes, making sure that the bottom pancake does not burn.

    These pancakes are served with sour cream, which goes perfectly with their taste.

    Pancakes with potato and meat filling in the oven

    These pancakes turn out tender and incredibly juicy.

    Ingredients

    for pancakes

    • flour - 1.5 cups (300 g);
    • chicken egg - 3 pcs.;
    • fresh milk - 0.5 l;
    • salt - level teaspoon;
    • sugar - half a tablespoon;

    For filling

    • mixed minced meat - 0.5 kg;
    • potatoes - 4-5 pcs. (400 gr);
    • pepper, seasonings, salt - to taste;

    for sour cream filling

    • garlic - 5 cloves;
    • sour cream - 200 ml;
    • salt, rosemary, pepper, herbs, other spices.

    Preparation

    1. Mix all ingredients for the dough until smooth.
    2. Fry the pancakes in a greased frying pan.
    3. Add spices to the minced meat.
    4. Peel the potatoes, boil them, and grind them into puree.
    5. Mix potatoes with raw minced meat.
    6. Wrap the filling into pancakes.
    7. Mix sour cream, chopped garlic, salt, rosemary and other spices thoroughly.
    8. Pour a little sour cream sauce into the bottom of the mold or frying pan.
    9. Place pancakes in one layer.
    10. Pour sour cream sauce over the pancakes.
    11. Place the next layer of pancakes and also pour sour cream sauce over them.
    12. Place the pan in the oven, which must first be preheated to 200 degrees. This dish needs to be baked until the pancakes are browned. As a rule, this takes no more than half an hour. The sauce will partially boil away.

    These pancakes are great not only for celebrating Maslenitsa, but also for other special occasions and even for the everyday table.

    Pancake chicken with meat and potatoes

    Kurnik is a traditional pie of Russian cuisine, prepared with a wide variety of fillings. In Rus' it was usually served at wedding tables.

    Ingredients

    • pancakes – 500 gr;
    • mayonnaise - 400 gr;

    For filling

    • potatoes - 2-3 pcs. (300 gr);
    • chicken fillet - 300-400 g;
    • black pepper - a quarter teaspoon;
    • onion - 1 pc. (100 gr);
    • butter - 50 g;
    • salt - 2-3 pinches.

    Preparation

    1. Grind the fillet or cut into pieces.
    2. Peel the onion and cut into cubes.
    3. Melt the butter in a frying pan and lightly fry the chicken over medium heat for a few minutes.
    4. Add onion to the meat and simmer for about 15 minutes until the fillet is completely cooked.
    5. Add salt and pepper to the filling.
    6. Peel the potatoes and grate them.
    7. Mix potatoes with fried meat.
    8. Grease the mold or frying pan with oil and a small amount of mayonnaise.
    9. Place a pancake on the bottom of the pan, grease its surface with mayonnaise.
    10. Place several pancakes overlapping the sides of the pan so that some of them hang down.
    11. Lay out some of the filling, level the surface, cover with a pancake and spread mayonnaise again. Spread another portion of the filling on top of the mayonnaise, cover with the next pancake and continue the procedure until one pancake remains.
    12. Cover the kurnik with pancakes hanging over the edges, grease the surface with mayonnaise, and cover with the last pancake.
    13. Heat the oven to 160-180 degrees.
    14. Bake the assembled chicken in the oven (approximately 15 minutes). Sprinkle the surface of the pie with grated cheese and sesame seeds, and put in the oven for the same amount of time.

    Pancake chicken is an excellent appetizer that is suitable for both entertaining guests and for an everyday table or family celebration.

    Children's pancakes with chicken and potatoes

    A universal dish for baby food that will appeal not only to children, but also to their parents.

    Ingredients

    • eggs - 2 pcs.;
    • sugar - 2 tablespoons (40 g);
    • milk - 1 l;
    • wheat flour - 300 gr;
    • sunflower oil - 2 tablespoons (40 g);
    • salt - a pinch;

    For filling

    • potatoes - 6-7 pcs. (500 gr);
    • chicken fillet - 250 gr;
    • sunflower oil for frying;
    • onions - 2 heads (200 g).

    Preparation

    1. Boil the potatoes.
    2. Finely chop the meat and fry it together with chopped onions in sunflower oil.
    3. Beat the eggs into a bowl, stir them with sugar and salt.
    4. Beat the eggs with a broom until fluffy.
    5. Pour milk into a separate bowl, add pre-sifted flour into it. Knead the dough.
    6. Add butter to the dough.
    7. Heat a frying pan or pancake maker, grease with lard or vegetable oil. Bake pancakes, frying them on both sides.
    8. Grind the chicken and onion in a food processor.
    9. Make mashed potatoes without milk, add shredded chicken and onions.
    10. Salt the filling to taste.
    11. Place a heaping tablespoon of filling on each pancake and wrap it in the shape of a tube or envelope.

    For children, such pancakes are served with sour cream, and for adults, you can prepare a sauce from sour cream with chopped herbs, pepper and chopped garlic.

    • The pancake dough should resemble neither liquid nor thick sour cream. The thicker the pancake batter, the thicker the pancakes will be;
    • potatoes cook faster and turn out very tasty if you steam them with boiling water before cooking and let them cool and dry completely;
    • It is better to place potatoes for cooking in boiling water, this way the minimum amount of beneficial substances contained in them is lost;
    • Milk in pancake batter recipes can be replaced with plain water, but pancakes made with milk turn out much tastier;
    • It is best to fry pancakes in a cast iron frying pan;

    meat and potatoes are universally combined foods. When preparing the filling, you can experiment: for example, add garlic, tomatoes, other vegetables, green peas, canned corn;

    • if you add a little white wine to the frying pan where the potato and meat filling is prepared, the filling will acquire a piquant and original taste;
    • if to prepare pancakes with meat you use not minced meat, but a piece of meat, then it should be cut into pieces no thicker than 2 cm;
