Cottage cheese is a universal product. It can be used in the preparation of sweets, namely various types of baked goods, as a filling for cakes or in its usual form, before adding a little sugar or jam to taste. In addition to desserts, cottage cheese is also used in dishes with vegetables, cheese and garlic. This article is dedicated to such a culinary masterpiece as with sugar. The recipe for this dessert is quite simple and varied.

Recipe No. 1: basic

First, let's look at how to prepare cottage cheese envelopes with sugar in the simplest way. Recipe No. 1 involves the use of the following products:

  • Cottage cheese (preference is given to products with a fat content of about 5-9%) - 400 g.
  • Butter - 200 g will be enough.
  • Sugar - about 150 g for the dough, for the filling - to taste.
  • Baking powder - no more than 2 tsp.
  • Flour - about 300-350 g.

Now that you have all the necessary products available, you should proceed directly to preparing the envelopes. First, grind the butter and sugar in a separate bowl. Then cottage cheese should be added to the resulting mass. All ingredients must be mixed thoroughly. Then, one by one, baking powder is added first, and only then flour, previously sifted, is added in small portions to the rest of the products. It is better to leave the resulting dough in the cold for half an hour. Then you should roll it out, but not very thinly (the thickness should be about 3-5 mm). Next, the layer needs to be cut into squares, the sides of which are 8 cm. Sugar is added to the center of each piece to taste.

Now the only thing left to do is to make envelopes from the squares. To do this, the corners of the pieces should be connected in the center. Now the envelopes should be placed on a baking sheet, previously covered with special baking paper, and left in the oven for about 25 minutes. So the curd envelopes with sugar are ready. A recipe with a photo will help you evaluate the appearance of the resulting delicacy. Bon appetit!

Recipe No. 2: another form

You can try making other cottage cheese envelopes with sugar. The recipe will be similar to the previous, basic one, but it will also have its own characteristics. The list of required products is as follows:

  • Cottage cheese (it is better to choose a product with medium fat content) - about 500 g.
  • Margarine - no more than 250 g.
  • 2 cups of flour.
  • Sugar - about 3-4 tbsp. l.
  • Baking powder - 1 tsp.

Let's start with margarine first. It should be grated on a coarse grater and left warm for a short time. While the margarine softens, combine the flour with and add the cottage cheese crushed with a fork. Now you can combine the resulting mass with margarine. You need to knead the dough until it stops being sticky. Now, to make it even more elastic when cooking, let’s leave it in the cold for an hour. After this time, the dough should be rolled out and circles should be squeezed out of it, quite voluminous ones at the same time. You can put sugar in the center of each piece if desired.

Now you need to make envelopes using a new method. To do this, the circles are folded in half twice, and their semicircular edge is pinched with your fingers. All that remains is to put the envelopes in the oven for baking for 20 minutes, after coating them with yolk for shine.

Recipe No. 3: alternative

You can make cottage cheese envelopes with sugar in another way. The recipe can be used to choose from any of the above. Just roll out the dough into a large circle. Next, it is cut into 8 equal parts, and each of these pieces is slightly cut from the narrow to the wide edge 3 more times. Sugar to taste is placed on the untouched part of the pieces. Next, you should fold the envelopes, placing the narrow edge under the wide part. You get these nice cottage cheese envelopes with sugar.

Very tasty, and most importantly, simple cottage cheese cookies, the origins of which go back to distant childhood. The recipe is designed for kitchen users of any level, so anyone can do it. By the way, the cookies are called “ Triangles“because the dough is folded like envelopes in the old days. It is also called cottage cheese cookies “Envelopes”.

It is especially necessary for children, since cottage cheese is beneficial due to its high calcium content, which is so necessary for the growing child’s body. But not all children like to eat cottage cheese. That's why cottage cheese is hidden in cookies! And the dough contains no sugar. Sugar is used only for dipping the cookies.

The total cooking time for cookies is about 2 hours.

Ingredients

  • cottage cheese 250 g
  • butter 100 g
  • flour 170 g
  • sugar 3-4 tbsp. spoons
  • baking powder 1/2 teaspoon
  • salt pinch

With this amount of ingredients in this recipe, you get 20-25 cookies, with a total weight of approximately 500 g.

Preparation

Knead the cottage cheese with a pinch of salt until it becomes a homogeneous mass without lumps.

Add melted butter and stir.

Add flour and baking powder through a sieve. Flour almost always needs to be sifted: it is saturated with air, which then helps the dough bake better.

Knead the dough with a spoon or your hands, then form the dough into a ball with your hands.

And put the dough in the refrigerator for at least 1 hour. The dough should rest well in the cold so that it becomes more elastic. Then it will roll out better and will not crumble.

After an hour, we take our ball out of the refrigerator and leave it to warm up at room temperature for 10 minutes. After that, we begin to make the curd cookies ourselves. Roll out the dough on a flat surface, well sprinkled with flour - the dough will show a greater desire to stick to this very surface. The thickness of the dough should be 2-3 mm.

Take a culinary ring or a glass with thin edges and cut the dough into circles with a diameter of 9-10 cm.

Now dip each circle on one side into a saucer with sugar and fold it in half with the sugar side inward. Dip one side in sugar again and fold again with the sugar side inward.

Lightly crush the resulting quarter circle and dip it in sugar on one side for the last time, place it sugar side up on a baking sheet covered with baking paper or a silicone mat.

Place the baking sheet with cookies in an oven preheated to 200°C. Bake for 20-25 minutes, until golden top. Remove the baking sheet with cookies from the oven and carefully transfer them to a plate. At this moment, it may seem that the cookies have not been baked, since they will be quite soft, but this impression is false; as they cool, the cookies will “correct” and become as they should, soft with a pleasant crust.

Cool the finished cookies completely and place them on a beautiful plate. Curd cookies Triangles ready, it's time to brew tea and go to the table! Bon appetit!

Then, warm oil is added. It can be melted or simply softened.

Using a mixer, beat the mixture into curd cream. At this stage, you can optionally add vanillin (to taste).

The dough is properly kneaded and formed into a ball. The consistency should be moderately thick and plastic. For the next two and a half hours, we send the workpiece to a cool place.

Roll out the dough into small layers 3 mm thick. We cut out round semi-finished products using special molds.

Dip each part one by one in sugar. It is convenient to do this on a flat surface: a plate or tray.

Fold the circle in half (sugar inside).

Then, dip one side of the semicircle into sugar again and fold it in half. The next step is to dip the fourth part of the circle.

The folded envelopes are carefully laid out on a baking sheet (previously lined with paper greased with melted butter) with the sugar side facing up.
