Today I walked past a confectionery shop and felt the aroma simply indescribable - baking, vanilla, mmmm. And so I wanted to cook something like that. The image of buns filled with caramel immediately formed in my head and this is what came out of it.
First, let's prepare the dough. In general, this will be our main job, since the filling couldn’t be simpler, and the streusel won’t take much time.
Heat the kefir a little until it is slightly warm, comfortable for the yeast. Heat the kefir over low heat and stir constantly so that it does not separate into curds and whey. Add fresh yeast to warm kefir, after crumbling it a little in your hand. Add 1 tbsp. l. sugar from the total amount and mix everything properly.

We leave the yeast alone and wait for it to wake up and start working hard on our buns.
Meanwhile, beat the egg with the remaining sugar to obtain a homogeneous mass.


After about 20 minutes we see the following picture - the process has begun.

Combine the kefir-yeast mixture, egg and sugar, add vanillin, salt, add softened butter (or margarine).


Gradually, in about 4-5 steps, add the sowed flour.

While this is possible, knead the dough with a spoon. In total it took me 2.5 cups and about 2 tablespoons.


This is how the dough turned out. It will still be a little sticky.


Cover it with cling film and place it in a warm place to rise several times. Immediately after this, and it should take about 30-40 minutes, you can start forming the buns. I had time to knead the dough and let it rise one more time. In general, it will never be superfluous.
In the meantime, you can prepare the streusel. To do this, combine butter, sugar, vanillin and flour in a separate bowl and rub into crumbs with your hands.

The topping is ready.

Knead it and divide it into 10 parts.


Since the dough remains a little sticky, to make it easier to work with, grease your hands with vegetable oil. Roll each ball into a flat cake. I do this with my hands without using a rolling pin. We place the candy in the center and connect the edges into a bag, forming a round bun. Place the buns in a greased round pan, seam side down.


Brush the top of the buns with milk and sprinkle with shortbread crumbs. Let our preparations rise again for another 20 minutes, covered with a towel.


Bake the buns until golden brown in an oven preheated to 180 degrees. In my case, this took 20-25 minutes maximum.


Let them cool slightly and serve the filled buns for tea. They turned out incredibly airy, fluffy and aromatic. Yes, the filling stays hotter than the dough, so you won't get burned.

Good afternoon friends! Well, spring has finally come, and not even spring, but rather summer. It's April, and it's as warm as July. The weather is just blissful and I don’t feel like sitting at the computer at all. And besides, the gardening season has opened and free time has become a bit tight. The other day I was going to a friend’s dacha to get in touch with nature)))), and since in the fresh air everyone usually has a good appetite and frequent tea parties, I decided to bake a cake for tea “ friendly family“. Look at the picture above what I did, and below I will write how I did it.

COOK rich yeast dough: 1 glass of liquid (50/50 milk with water); 1/2 cup sugar; 10 g of dry yeast (1 tablespoon), mix everything, wait until the yeast disperses well.
Then add a little salt, 150 g of softened margarine, 2 tbsp. tablespoons vegetable oil, 2 egg yolks mashed with 1/2 cup sugar, a little vanillin, 4-5 cups sifted flour.
Mix everything well and knead the dough.
Grease the walls of the dough pan with vegetable oil, put the dough there and place in a warm place to rise. My dough took about an hour and a half to rise.
After the first rise, add the beaten whites of two eggs into the dough, mix everything well again and let rise again.

READY Divide the dough into approximately equal balls.
Then roll out each ball, put the filling in the middle (jam, caramels, raisins, chocolate, berries, etc.) and form the ball again.
Place the filled balls close to each other in a mold greased with vegetable oil and sprinkled with semolina.
When the form is completely filled out, “ friendly family” must distance itself, that is, rise straight in shape. The time depends on the quality and quantity of yeast; my “friendly family” stood for about 30-40 minutes.
After this, carefully brush the “friendly family” with beaten egg and place in an oven preheated to 180*.
Bake until golden brown, about 40-50 minutes.
By the way, “friendly family” can be made not only with sweet filling.
You can use minced meat, liver, liver, stewed cabbage, cottage cheese and much more.
