Tips:

Step 1: Prepare the ingredients.


First of all, using a sharp kitchen knife, peel off all the vegetables indicated in the recipe, rinse them thoroughly, dry them with paper kitchen towels, spread them on a chopping board and chop them.

Chop onions in half rings or large cubes of 1 cm, chop carrots into strips, rings, halves or quarters of no more than 5 millimeters in size, and chop the garlic into layers with a thickness of 2–3 millimeters.

Then we move the meat to a cutting board, remove excess fat from it, of course, if there are any, and optionally divide each thigh into 2 halves, although you can leave whole. After that we send them to a deep bowl, rub with garlic, to taste with salt, black pepper and a mixture of spices and leave in this form on 15–20 minutesto pickle up. We do not lose a minute, we lay out the rest of the ingredients that are needed to prepare the dish, and after the right time proceed to the next step.

Step 2: Cook the fried chicken with carrots.


When the meat is infused a little, put on a large fire a large deep frying pan and pour the right amount of vegetable oil into it. In 2-3 minutes  gently dip into the strongly heated fat soaked in the aroma of spices of the thigh. Fry them on each side for 10 minutes until dark brown crust, periodically with the help of a kitchen spatula, turning it from side to side so as not to stick to the bottom of hot dishes, and blush evenly.

If the liquid evaporates earlier, but the thighs with vegetables are not ready, it is better to add a little more water and soak everything on moderate fire under a covered lid 5–7 minutes.

When the vegetables soften and the chicken becomes tender and when cutting from the hips, a clear liquid will flow out, turn off the stove and let the dish brew in a closed form, at least 10 minutes, although it will be very difficult to stay because of the divinely delicious aroma that will spread throughout the apartment.
