Stir until it is smooth. Heat if necessary in a weak hot plate or a water bath. Finally add 10 g of pre-soaked gelatin in two tablespoons of water. Stir until a homogeneous mixture and allow it to cool, but not in the refrigerator.


Cool the cooled cream over the fluffy cream and mix with the cooled chocolate mixture.


Place in the freezer for one or two hours.

6-15 g of gelatin are soaked in 70 ml of water when it swells to melt in a water bath. Boil the syrup with 100 g of water and 150 g of sugar.
