150 grams of solid tofu

1 carrot

big handful of peas, broccoli, green beans, asparagus or other green vegetables

a few sprigs of cilantro and green onions

2 tbsp. cashew nuts

for sauce:

1/2 tbsp. Sahara

1/2 tsp dried garlic

1 tsp corn starch

First of all, prepare the marinade sauce by mixing soy sauce, vinegar, sugar and dried garlic, and adding to them half of a hot pepper (fresh cut, dried crush in a mortar) and finely chopped green onions (leave 1 feather to decorate the finished dish). Cut hard tofu in the form of not very long and not very thick parallelepipeds, pour the marinade and how to mix. Ideally, tofu should be completely covered with marinade, if not - it is desirable to mix it from time to time.

The longer tofu will marinate, the better: ideally a few hours, if possible at least 30 minutes, if not at that time, marinate tofu while you cut the rest of the vegetables and heat the wok. Cut the carrots into thin straws, and rinse the green vegetables, dry and, if necessary, cut into small pieces. Set the wok to maximum heat, add enough oil and half the remaining dried pepper (if using).



After letting the oil warm up a little, quickly fry the cashews until golden, then remove the nuts with a skimmer and fold them on a paper towel. Catch the tofu from the marinade, peel off the onions sticking to it, add it to the wok (everything will spit up and sprinkle right away, this is normal) and fry from all sides. Continuing to fry and stir the contents of the wok, add carrots in a minute, green vegetables in another minute, and fry them all for another 1-2 minutes so that the vegetables get a bright color, but do not lose the crunch.

At the end, pour the whole marinade into the wok, which will immediately boil, followed by starch dissolved in a couple of tablespoons of water. Continue stirring the contents of the wok for a minute or less, until the sauce is reduced to the desired volume and consistency. Spread fried tofu with vegetables in plates or bowls, garnish with thin slices of fresh peppers, roasted cashews, diagonally sliced ​​green onions and cilantro leaves, and serve, if desired, accompanied by noodles or rice.
