Soups are an obsession this time of year! Definitely my favorite season. This is called raw broccoli and potato soup. The name just makes you want to try, right ?! The soup gets rather thick, which makes it almost chowder, but you can make more soup by adding more broth or milk, this is how we prefer it. If you like fragrant soups, then you definitely want to try it. Broccoli and cheese soups are always good, but with potatoes and extra bacon this soup is too good to be true!

For cooking potato soup with chicken you will need:

any chicken parts - 250 g;

potatoes (I have new potatoes) - 4-5 pieces;

onion - 1 pc .;

small carrots - 1 pc .;

salt, spices for soup - to taste;

imeretinsky saffron - 1 tsp;

garlic - 1 clove;

bay leaf - 1 pc .;

vegetable oil - 2 tbsp. l .;

How to cook cheese with broccoli and potato soup

You can easily change vegetables depending on what you like best. 😉 And if you like bacon, you can add a few more pieces. 😉. Loaded broccoli and cheese soup. This potato soup  so full of flavor and contains so much delicious ingredients, including cheese, potatoes and broccoli. Of course, be a hit in every home.

In a large pot, mix the chicken broth, carrot potatoes and onion powder. Whip in the milk and cook for another 5 minutes, until the sauce thickens. Add cheese and mix until melted. Add salt and garlic pepper. Pour cheese sauce  in a large pot and mix until well combined. Add more milk for a finer consistency and add extra salt and pepper. Top with bacon slices.

  • To boil, cover and simmer for about 10 minutes.
  • Add broccoli, cover and simmer for another 10 minutes.
  • While boiling, melt the butter in a large saucepan.
  • Beat in flour and smoke for another minute.

If you seem to have the ham left around, we really love it with ham just like bacon, and it’s equally good with onions or green onions, so just use what you have.


Peel the onions and carrots, cut them into slices, place in a frying pan with vegetable oil.


Fry vegetables until soft, stirring occasionally.

Cooking Chicken and Potato Soup:

Step 1: Prepare the broth.

Just like potatoes, rinse and peel carrots. Cut the tops and chop into small cubes.



Peel the onion and chop it into small pieces.



Peel the garlic, cut it into small, thin slices.

Step 3: Cooking the soup.




As soon as the broth is boiled down 10 minutes, put carrots, potatoes and onions in it. Stir and boil more. 30-35 minutes. Potatoes and carrots should be fully cooked, but do not overcook, so that they do not fall apart. Behind 5-7 minutes  until the end of cooking, add garlic cloves to the soup. After the vegetables are cooked, turn off the soup and put the lid on 5-10 minutes. This is necessary so that the taste of the soup becomes richer.
You can serve your cooked delicious, fragrant and easy chicken  soup with potatoes.

Step 4: Serve chicken soup with potatoes.




Serve the cooked chicken soup with potatoes hot with slices of black bread. I do not recommend spoiling the taste of the soup with mayonnaise or sour cream, better add some more pepper or mustard.

In this recipe, I do not fry vegetables before adding to the broth, for my taste, without such vegetable processing, the soup is less fat.

Total time: 4 hours 45 minutes. In the bowl of the slow cooker 5-6 quarts add raw chicken, cooked vegetables, seasonings, bay leaf and chicken stock. Cover and cook at a high level for 4 hours or low for 8 hours. Slowly pour into the soup a heavy mixture of cream, stirring to mix. Cover and continue cooking for another 30 minutes. Serve with warm freshly baked cheddar cheese, onions and sprinkle with ground black pepper.

  • When the cooking time is over, discard the bay leaf.
