We knead the butter with our fingers to the state of oily crumb, then add sour cream and immediately proceed to kneading the plastic dough. Overdoing here is not worth it. The Dobrotvorsky apple pie in Anastasia Tsvetaeva’s memoirs is called “baking with sour cream”. At this facts end, and speculation and legends begin.   4. Fingers distribute the dough in a round shape, making a rim at least 4 cm high. Place the dough form in a plastic bag and send to the refrigerator for 20-30 minutes.
  5. While the dough is steaming in the fridge, we prepare an apple filling. We'll wash the apples, cut them in half, take out the core, cut into thin slices. The most fastidious apples can also peel. I do not do this.
  6. After the necessary time has passed, we take out the form with the dough from the refrigerator, put the apples in it neatly - it is possible in a circle, or in a random order.
  7. Beat sour cream with a mixer with sugar, egg, vanilla sugar and flour.
  8. Pour cream in the form of apples.
  9. Bake the cake in preheated to 180 ° C for about 60 minutes. Remember that all ovens are different. Your baking process may take a little more or less time.
  10. Tsvetaevsky apple pie should be completely cooled before use so that the filling does not spread when sliced. It is best to cool it first on the grill, and then another 1 hour in the refrigerator.

In the recipe, I indicated the amount of sugar for the dough - from one to three tablespoons. In the original - there are three spoons. But in my opinion, with so much sugar, the cake goes too sweet. Perhaps three tablespoons of sugar in the dough are wonderful when adding very sour apples to the cake. But in the case of adding sweet and sour - one tablespoon of sugar in the dough, in my opinion, is optimal.

On the Net are lots of recipes for Tsvetaevsky pie. They are slightly different proportions of products. And also the fact that sugar is either added to the dough, or is not put at all. In the latter case, there is a contrast between savory dough and a sweet filling. I love such a contrast - savory, crumbly dough, plus the sweetness of other ingredients. As for this cake, if you knead the dough without sugar, it is better to add a pinch of salt there, so that the dough is not bland. And, perhaps, to balance the level of sweetness of baking by adding more sugar to the filling.

Regarding vanilla, it was not in the recipe. But as practice has shown, with vanilla pouring the cake turns out even tastier!
