Italian culinary specialists are very inventive gourmets; therefore, they are the authorship of the recipe for tiramisu. It is difficult to say who and when first prepared this airy multi-layered dessert, since there are many versions of its origin, but now it is considered one of the most popular in the world. The word "tiramisu" translates as "lift me to heaven", and this slightly expressive name familiar to the Italian language conveys the delicious taste of the dish.

What is the uniqueness of tiramisu

They say that real tiramisu can be tasted only in Italy, since its preparation requires fresh mascarpone cheese, which the Italian pastry chefs produce from rural farms. Mascarpone is an Italian cream cheese of a sweetish taste, with a fat content of 75%. Mascarpone can be bought in regular stores, but ideally it is better to use freshly prepared.

For tiramisu, you will need savoyard biscuit old recipe  from sugar, flour and eggs. This cookie has an elongated shape and porous structure, so it perfectly absorbs the cream and liquid, while not falling apart. In England, such cookies are called ladies' fingers.

For impregnation used strong Sicilian wine Marsala, a bit like Madeira, but more sweet.

How to cook tiramisu at home

If desired, you can make a delicious home-made meal if you replace the mascarpone with any cream cheese, such as Philadelphia and Boucotta, rich sour cream, cream or fresh fatty cottage cheese. Instead of savoyard biscuits, you can take a delicate sponge cake, and Italian wine will replace brandy, rum or liqueur. And although culinary aesthetes believe that it will no longer be tiramisu, in fact it will turn out delicious dessertIt’s not for nothing that many chefs of famous restaurants successfully replace products without prejudice to the final result. The composition of tiramisu also includes chicken eggs, sugar, espresso, fruit, berries, cocoa powder and other products, depending on the recipe, such as nuts, chocolate pieces, raisins and coconut chips. If children try the cake, it is better to replace coffee with fruit juice. Another feature of tiramisu is that it is not baked, and cooled in the refrigerator. In its texture, it resembles pudding, soft, melting in the mouth, sweet, light, airy and tender.

How to make savoyard biscuits for tiramisu dessert

Interestingly, the recipe of this old pastry has remained virtually unchanged for five centuries, and it is prepared quite simply, and without soda and baking powder. In this case, Savoyardi is obtained fluffy and airy, and all thanks to the whipped egg whites and yolks separately. Crisp on cookies is formed in the oven, after the products are sprinkled with powdered sugar.

Beat 3 egg whites until strong peaks, enter 30 grams of sugar and continue to beat, you should get a homogeneous protein mass. Beat separately 2 yolks and 30 g of sugar until you get a lush milky cream. Carefully combine the yolks with the protein mass and add 50 g of the sifted flour. Stir the dough gently with a spatula, without using a blender, cover the baking tray with oiled baking paper and squeeze 10–12 cm long strips from the pastry bag, leaving a distance of 4–5 cm between them, as the dough rises during baking. Sift on powdered sugar (30 g) on cookies, wait until it is absorbed, and after 10 minutes, sprinkle the products with powdered sugar again. Bake the savoyardi for 10–13 minutes in an oven at 200 ° C until it becomes golden beige. Do not be surprised that hot cookies are very soft, and as they cool it hardens - this is how it should be. Some housewives bake cookies in the form of cake, and then cut it into strips.

The secrets of making cookies Savoyardi for tiramisu

To prepare the Savoyardi, take eggs at room temperature, while not beating the proteins for too long, otherwise they will lose their shape and become liquid. But the yolks need to be whipped, on the contrary, longer, so that the dough was lush and airy. Ready dough  immediately set aside on a baking sheet, until it is saturated with air bubbles, because the longer it costs, the worse it will rise. Put the cookies in a hot oven so that a brown crust appears on it, and, if possible, turn on the convection function.

You can make tighter cookies if you add more flour and mix the beaten eggs with vodka, brandy or whiskey. As they say, tastes do not argue! Interestingly, the cookies Savoyardi appeared long before tiramisu and enjoyed great popularity in aristocratic houses. It is very tasty!

Cooking Mascarpone for Tiramisu

Making the cheese yourself is a commendable decision, besides, it will turn out to be very fresh, which should be in accordance with the classic recipe. Mascarpone is a bit like thick cream or fat sour cream, and it's not difficult to cook it.

One liter of natural high-fat cream from 25% fat content bring to a boil in a saucepan in a water bath, reduce the heat and cool to 85 ° C. Use a food thermometer for testing. Remove the cream from heat, add 3 tbsp. l lemon juice, without stopping stirring, and then again put the mass in a water bath and roast up to 84 ° C. At the same time continue to interfere with the cream, until they thicken, like cream. Remove the pan from the heat and, while stirring, cool the cream to about 45 ° C.

Strain the resulting mass through a cotton cloth or four layers of gauze to make a glass serum, and then hang the cheese overnight. In the morning, wrap the mascarpone in cheesecloth and put it under pressure for 10 hours in the fridge, stirring occasionally. The longer he will stand under the yoke, the thicker will be the mascarpone cream. In the cheese there may be small lumps that should not scare you, because during the preparation of the cream you will beat the mass, and it will turn out smooth and homogeneous.

For making cream and assembling Tiramisu cake:

  • Mascarpone cheese - 350 grams,
  • Cream (fat content of 33%) - 250 ml,
  • Sugar powder - 30 g,

For starters, we need to bake cookies. To do this, separate the yolks from the proteins, the proteins need to be sent to the refrigerator.

We take out the cooled egg whites from the refrigerator and, mixing them with the remaining sugar, beat with a mixer or whisk until a stable foam.

Combine the protein and yolk mass.

Then you will need a pastry syringe, paper cone or bag. We transfer the prepared dough into a syringe or bag, and pour it in small strips onto a baking sheet, which has been previously greased. butter  and covered with parchment paper, which was oiled again.

How to make tiramisu cake cream

Separate the yolks from the proteins and place them in a deep bowl with the sugar. Bowl put in a water bath and whip them with sugar. Under the influence of the temperature, the yolk cream will thicken and will resemble a scalded.

Before you connect custard  with mascarpone cheese, it needs to be cooled so that the cheese does not melt.

Beat the mascarpone with the yolks until smooth and put in the fridge.

Now let's do the cream for dessert. To do this, cold cream, necessarily high-fat, should be whipped to a thick state. If you do not have fat farmer cream at hand, then I advise you to use gelatin to make cream. In the recipe for the steps in my photo just pasteurized cream out of the box. Though they are with a thickener, they have already been tested by personal experience; if you beat them up for a cake, it is better to add gelatin. How to use your gelatin is best to get acquainted with the recommendations on the package. I soaked the gelatin in a small amount of cold boiled water when it swelled - melted it over low heat.

Mix whipped cream with powdered sugar and, whipping, pour in a small stream of gelatin. Then we get cream with Mascarpone and, stirring it, add whipped cream. Mass gently whisk whisk or mixer at a slow speed.

Now prepare the coffee - alcohol impregnation. To do this, you need to pre-brewed and already cooled coffee (proportions: 350 ml of water and 50 g of ground coffee) mixed with brandy or liqueur (I had whiskey on hand). If the Tiramisu cake is prepared for a children's celebration, it is better not to add alcohol to the soak.

Each biscuit stick should be dipped into the coffee mixture and wait until it is saturated with the mixture, but it does not allow it to limp.

Soaked biscuits coffee shift in the prepared form, where there are already a couple of tablespoons of cream. Then we cover the layer of biscuits with a layer of prepared butter cream.

And so on, until the ingredients run out.

Top of dessert should be covered butter cream  and send the dessert to the fridge infuse.

Then, before serving, dessert should be sprinkled with chocolate grated on a fine grater.

or cocoa powder.

Recipe with curd or curd cream

But some simplify the dessert recipe to your liking, sometimes there is no Mascarpone cheese on hand, so the hostesses have invented to replace it with fat cottage cheese.

This recipe for Tiramisu without raw eggs with curd cream was sent to Slavyan's Notebook.

In order to prepare a light version of Tiramisu or cottage cheese dessert with biscuit cookies, you need the following ingredients:

  • Bold cottage cheese - 300 grams,
  • Sour cream (preferably rustic) - 2 tbsp. spoons
  • Sugar powder - 3 tbsp. spoons
  • Biscuit cookies - 150 grams,
  • Cocoa powder or chocolate - 2 tbsp. spoons or 20 grams,
  • Ready coffee - ½ cup.

Preparation of lightweight version of Tiramisu with curd cream

To start, prepare curd cream. To do this, cottage cheese should be ground through a fine sieve or punch with a blender (beat with a mixer), then add sour cream and mix again. Next, add icing sugar. If the powder was not at hand, you can cook it at home in a coffee grinder made of sugar (you will need 2 tablespoons).

Now the biscuit should be soaked with cooled coffee and put the first layer in the form for a dessert, you can also decompose the dessert into portioned ice-cream bowls or transparent glasses. Then we cover the biscuits soaked in coffee with a layer of cottage cheese cream  and then spread cookies again. From above we cover the dessert with a layer of cream and send to the refrigerator for about 30 minutes. Before serving, sprinkle the dessert with cocoa powder or grated chocolate.

  Tiramisu dessert is designed for two servings. This dessert can be a great addition to any table, it can even be prepared for children, while you can soak cookies not in coffee, but in cocoa, it turns out very tasty and fragrant.

Well, if you did not find biscuit cookies or real Savoyardi, or you don’t want to bake it yourself, then we suggest you replace this ingredient with regular ready-made biscuit cakes that need to be cut into arbitrary pieces (dice, strips, rectangles).

You can also make a cake a la Tiramisu, for this the same sponge cakes  It should be smeared with cream, but pre-soaked the cakes with ready-made chilled coffee, in which you can add a little brandy or Amaretto. We also leave soaking for a few hours, this is already a very light version of the similarity to Tiramisu.

Each of us at least once ordered a dessert in the restaurant under the magical and mysterious name “Tiramisu”, which, if translated from Italian to Russian, means literally “lift me up”, but Italians interpret it as “lift my spirits”. So what is it?

The dessert is traditionally made from Mascarpone cream cheese, which has a delicate texture, and Savoyardi biscuit biscuits, which are soaked in freshly made espresso with the addition of alcohol.

From above, the dessert is generously powdered with high-quality cocoa powder, decorated with fresh mint leaves, cinnamon sticks.

Tiramisu - Italian Traditional Dessert: History of Origin

The history of this dish dates back centuries into the times of the Medici dynasty. The Florentine cook wanted to please the duke so much that he prepared the so-called “zuppa del duca” - soup for the duke, using cream cheese, fresh chicken eggs and dry biscuit cookies.

The airy dessert fell so much to the traveling duke's liking that the Tuscan Archduke Cosimo III de Medici, the famous sweet-tooth, took the recipe with him to Tuscany. And the famous soup received its real name a little later, in Venice.

Courtesans usually ate it before the most important dates to raise their tone and mood, considering tiramisu to be a powerful aphrodisiac.

Skeptics say that everything is much simpler and tiramisu comes from the lowest strata of the population, when peasants dipped stale cookies in coffee, and then spread cheese on it.

Challenging history is an ignoble affair; in one way or another, dessert has world-wide fame and impeccable taste.

Please note that dessert should never, in any case and under no circumstances be sugary. Sugar, and better icing sugar, is used to a minimum, leaving room for disclosing the taste of bitter cocoa, bitterness of fresh coffee and a touch of quality alcohol.

Master class from Julia Vyztskaya:

If you decide to use berries to decorate tiramisu, lay them out just before serving dessert.

Tiramisu (see photo) is a delicacy popular in Italy. With the opening of supermarkets, it was possible not only to taste it in a restaurant, but to purchase all the ingredients and make tiramisu. However, the hostesses are not limited to the classics, and the recipe of this delicious "cheesecake" is transformed, acquiring new culinary forms. Today we will tell how to cook tiramisu at home using various ingredients.

Recipes for homemade tiramisu are varied. Some of them involve the use of mascarpone, others - ricotta, cottage cheese, sour cream or cream, which you can safely replace it. But all the options that can be cooked do not require baking.

Tiramisu with the most delicate mascarpone cheese (classic)

For cooking you will need:

  • mascarpone (1/2 kg);
  • savoyardi (finger-shaped biscuit cookies) (300 g);
  • 4 things. eggs;
  • 100 g of sugar;
  • cold strong coffee (400 ml);
  • cocoa (about five tables. Lodges.);
  • rum (cognac, wine, liquor) (3 tables. spoons).

Cooking tiramisu at home does not take much time (see the video). To begin with, egg whites are separated from the yolks, cooled and whipped to a foam until thick. Chilled mascarpone is mixed with the remaining yolks, pre-pounded with sugar. Then both blanks are connected to each other. You got a gentle cream with cheese.

Each Savoyardi stick is dipped in coffee with the addition of rum and spread in dense rows on a tray (baking tray). Then the first row is covered with a thick layer of cream (1/2 parts), the next row is placed and again the tiramisu is covered with whipped mascarpone. After that, the dessert is placed in the refrigerator for several hours, covered with cocoa on top. This mascarpone tiramisu is very soft and tender.

The recipe of Julia Vysotsky (from the cookbook)

At home, it is easy to prepare mascarpone tiramisu in the way that Julia Vysotskaya does. Her recipe is almost the same as classic version. It also turns out to be airy and very tasty.

Julia Vysotskaya warns that at home tiramisu is applied and eaten exclusively with a spoon. And if you have enough patience and endurance, it is better to let it stand in the fridge not for 3 hours, but about a day after preparation. Then it becomes even more airy and tender, which characterizes tiramisu at home.

Preparing a delicious tiramisu from Julia Vysotskaya like this:

  • 5 eggs (separate the fractions, rub the yolks with ½ cup of powdered sugar, and whip the whites in a strong foam);
  • 400 g mascarpone mixed with yolks, then carefully put there proteins (Julia Vysotskaya warns that all components must be cooled, the packaging is clean, and the combining process must be neat);
  • Coffee (250 ml) is combined with brandy (2 tablespoons l.), Quickly dipped in Savoyardi and laid out in a bowl;
  • We cover cookies with cream, in the presence of ingredients, repeat the display of cookies with the second layer;
  • We put the dessert in the cold (at home in the winter you can take it to the balcony);
  • Sprinkle before serving cocoa.

As you can see, Julia Vysotskaya is not too far from the classical foundations. That is why it is easy and fast to prepare its tiramisu. And the main thing is that it turns out so tender that you cannot distinguish it from dessert with whipped cream (although soft cheese is preferable for Yulia Vysotskaya).

Tiramisu without the use of mascarpone cheese

Do not be discouraged if someone thinks Italian cheese is difficult or expensive. The hostesses have long invented what can be replaced with it. We prepare tiramisu without mascarpone on the basis of thick sour cream (450 g) or cottage cheese (curd sour cream mass 1: 1). To make a cream, cottage cheese is ground through a sieve and whipped with a blender with sour cream, then combined with yolks, whipped with sugar and white foam.

The recipe for making dessert is identical to the previous options. It is possible to replace in it not only a cream, but also a foundation: instead of Italian cookies, bake biscuit cakes at home, or cut the purchased biscuits into necessary strips. Of course, it will not be a classic tiramisu, but very affordable at home and no less tasty.

With cream

Domabez baking, you can also cook tiramisu with cream. This version of the dessert is low-calorie, as it does not contain eggs. Fatty cream (at least 30%) is whipped (300 ml), ricotta (250 g) is mixed with powdered sugar ( 1.5-2 tables. lies.) and everything is interconnected.

The rest of the recipe repeats the classics: Savoyardi is dipped in coffee, laid out on a baking sheet and covered with a layer of cream. After a 3-hour exposure of tiramisu at home, sprinkle cocoa or crumbs of dark chocolate. Considering that cream is a perishable product, it is not recommended to store dessert at home for more than 3 days.

Tiramisu without eggs

Another recipe for Italian delicacies at home using ricotta and without eggs:

  • italian cookies (1 pack);
  • ricotta (500 g), 250 g. Mascarpone;
  • powdered sugar (150 g);
  • orange (3 pieces);
  • ginger, cinnamon, mint;
  • fresh strawberries (1 \\\\ 2 kg).

A peel of oranges (2) is grated. The cheeses are mixed, add powdered sugar and grated zest. Beat the mixture thoroughly.

The strawberries are cut into slices, the following syrup is prepared in a skillet: the oranges juice is mixed with the remains of powdered sugar and spices, heated to dissolve the sugar. In this syrup is supposed to soak the cookies, which then fold tightly to each other.

On the soaked biscuits spread cream, then strawberry layer, then repeat the layers. Tiramisu with ricotta and strawberries decorated with fresh mint leaves. It is difficult to replace fresh mint, but if it is not present, crushed dry mint will fit, but placed between layers of dessert.

Often, those who dared to make a treat at home, complain that the cake turned out to be liquid. This can occur for several reasons:

  1. uncooled components;
  2. dirty packaging;
  3. badly whipped protein or strongly disintegrated cheese;
  4. the shelf life of the ingredients is nearing its end or expired.

If the liquid turned out to be a dessert with cream, then they are advised to add a special thickener. In addition, you can add diluted gelatin. But if you use heavy cream, then such a problem usually does not arise.

What to do if the dessert is not with cream, but with cheese? A little liquid cheese is obtained almost always, so it is recommended to cool tiramisu at home. And Italian cheese can always be replaced by a more familiar one: “Philadelphia”. In addition, if you do everything as it is written, then you get a cake or not, you will still eat it with great pleasure. Make sure that cooking tiramisu at home is not that difficult?
