We will share with you a little secret: put the liver in warm water for a couple of minutes, and you can remove the film much faster and easier. This is a very important process. Having forgotten about him, a careless cook will prepare a tasteless and bitter liver, no matter how hard he tries in further stages of cooking a dish.

What we need:

- Beef liver - 600-700 g
  - Milk - 200 ml
  - Onions - 2-3 heads
  - Mayonnaise
  - Egg, raw
  - salt
  - Ground black pepper

Step 1. Mix milk and a raw egg in deep dishes.

Step 2. Cut the liver into thin pieces (about 1.5 cm). Omit pieces of liver in our milk-egg mixture and leave the "gain softness" for no less than half an hour. So we end up with a very tender liver that will literally melt in your mouth.

Step 3. Glow the pan, pour a little bit of vegetable oil on it. Now we begin to fry the liver: take out the meat pieces from the milk and put them in the pan. But do not pour the mixture anywhere, we still need it. Liver slightly browned on both sides and add a couple of pinches of salt and pepper. It is important not to overdo the liver in a frying pan, as this can make it hard.

Step 4. Take a bow. We fry it in a clean skillet until golden brown. We'd better cut the bulbs into circles.

Step 5. Take the pan and lay out the liver and onion in layers. Each layer we fill with mayonnaise on top. Now we take the laid milk-egg mixture and pour it into the pan with our layers of onions and liver. Layers must "sink" in the mixture. If your milk and onions are not completely “flooded” in your pan, do not be discouraged and just add as much water as you need.

Step 6. Add a little more salt to the pan, put the liver and onions on a slow fire and cover the pan with a lid. Liver we simmer another 5-7 minutes.

We advise as a side dish to the stewed liver. Baked in the oven, or cooked in the form of mashed potatoes, it will be perfectly combined with our dish for taste. Another option for a good side dish to the liver can be called with sour cream. Two delicate dishes complement each other the best.

But do not think that absolutely any side dish will not suit a beef liver. Do not serve the liver with rice, as both of these products "slow down" the bowels. But buckwheat, about which we just spoke, on the contrary, accelerates the work of the stomach due to the fact that it is rich in fiber.

Soft and juicy beef liver goes well with legumes - beans and lentils. In this garnish there will be also many useful elements, and dinner will be enjoyed not only by you, but also by your body.

Vegetable dishes are well suited to beef liver. For example, stewed carrots   or braised cabbage. Moreover, the cabbage can be taken as an ordinary white cabbage, which the housewives need to be well extinguished and filled tomato paste, swede or broccoli. The latter can be boiled and fried - and so, and so it will be delicious.

If all the strength and you went to the liver, vegetables, you can not even cook and make them a salad. Do not think that a harmonious dinner will suffer from this, on the contrary, nutritious meat dish   perfectly complement the light fresh vegetables.
