And what is important, you can cook them so often, and not to repeat at all - after all, with what kind of stuffing they are not cooked. But what needs to be said at the beginning is that these small, like cupcakes, confectionery   are English and American. And just what we are accustomed to cooking under this name is American muffins. And unlike their English counterparts, who are baked from yeast dough, is that they are prepared from flour with the addition of baking powder or soda, or both.

But do not confuse them with cupcakes, which have a different form of the finished product and a different cooking technology. In addition, cupcakes are fatter, although more “light - air”, and once fat, it means more high-calorie, and their close American relatives - have less calories. And if you replace part of the oil in the recipe with low-fat kefir or yogurt, and some flour with oatmeal, it can be almost dietary. But however, more on that later.

And now for the recipes. There are many of them today, as they say, for every taste.

  Muffins - a simple classic recipe

A classic American muffin can be cooked with bran, and usually without filling, or with candied fruits, nuts, and dried fruit.

However, the recipe is basic. Knowing it, you can add various additional ingredients, change the taste and prepare many different options. He will not be called a classic, but it will still be a muffin.

We will need:

  • flour - 200 gr
  • sugar - 100 gr
  • butter   - 100 gr
  • milk - 100 ml
  • egg - 1 pc
  • baking powder - 1 tsp
  • vanillin - pinch
  • salt - pinch

Cooking:

1. Remove the butter from the refrigerator and cut it into small pieces.

2. Using the whisk, beat the egg into the foam. Continuing to beat down, add oil and vanillin.


3. Pour in slightly warm milk and mix everything well again until smooth.

4. Sift the flour and baking powder into a separate bowl. Flour is best to use top grade. As you know, muffins quickly stale. Top grade flour will slow down this process somewhat. Add sugar and a pinch of salt. Stir everything.

There is one simple rule: add a pinch of salt to sweet pastries, and a not sweet pinch of sugar. This allows you to make pastries even more delicious.

5. In the dry mixture add the liquid component and mix with a spoon. In this case, the mixer does not mix the dough.

It is believed that for the preparation of classic muffins, it is necessary to mix the dry and liquid components separately, and then pour the liquid component into the flour and mix thoroughly with a spoon.

However, this rule does not always work. And you may come across recipes where the sequence of bookmark ingredients may differ slightly! But not in the classic version, for that and its name, to do everything strictly according to the rules!

6. Spread the mixture into silicone molds, filling them into 2/3 parts. Before they need to be lubricated with vegetable oil. Often, special paper liners are also put into the forms, and the dough is already laid out in them.

When serving pastries in paper cups, it looks much more aesthetic, besides taking them in a paper cup is much easier than with your hands.

7. Preheat the oven to 180 degrees in advance.

8. Bake 25 minutes until tender. Readiness is determined by the well-known method. If you pierce pastries with a toothpick, and it will not remain on it batterso the muffins are fully prepared.

9. Let them cool slightly and put on a dish. You can decorate with glaze, grated chocolate or simply sprinkle with powdered sugar.


To add fresh taste to the dough, you can add the lemon peel half. Moreover, it should be remembered that only the yellow part of lemon should be rubbed, since the white part tastes bitter. She will give baking a bitter taste.

The following recipes for which the muffins are cooked most often are recipes with chocolate. Prepare them with pieces of chocolate, or simply with the addition of cocoa. Let's look at both recipes.

Cocoa Chocolate Muffins

We will need:

  • flour - 250 gr
  • sugar - 150 gr
  • butter - 150 gr
  • milk - 100 ml
  • egg - 2 pieces
  • cocoa powder - 5 tbsp. spoons
  • baking powder - 2 tsp
  • salt - pinch

Cooking:

1. Melt the butter over very low heat. Add cocoa to it, mix. Then gradually pour in the milk, continuing to stir, so that the mixture does not stick to the bottom.

2. Pour sugar and stir until it is completely dissolved. Bring to a boil, then turn off the mixture and allow it to cool completely.

3. In one cooled mixture, beat eggs one by one and mix to make the mixture soft, supple and homogeneous.

4. Sift flour with baking powder, add salt and add everything to the resulting chocolate mixture. Mix with a spoon, mixer is not recommended. It should turn out not very thick dough.

5. Lubricate the molds and put in them chocolate doughby filling the form into 2/3 parts. The dough in the baking process will rise well and baking will turn out beautiful and lush!

5. Oil the molds. If there are special paper liners, attach them to the forms. Fill them in 2/3 of the dough and stick the chocolate pieces.

6. Pre-heat the oven to 200 degrees. Bake for 20-25 minutes until cooked.

7. Remove from the oven, let cool, then pull out of the molds.


In this recipe, you can also add any nuts and raisins as additional ingredients. If you add nuts, carefully re-sort them and peel off the shell, it may not be in the form of a broken tooth!

  Muffins with chocolate chips - recipe №2 classic

  Orange Muffins

I cook this recipe with oranges, but you can cook it by adding any fruits or berries. For the same recipe, you can cook by adding lemons, tangerines, kiwi, apples, pears, or whatever you want. The recipe is just as simple. like everyone else, but the baking itself turns out just delicious.

  • flour - 200-250 gr
  • sugar - 120 gr
  • vanilla sugar - 10 gr (bag)

  • walnuts - 12 halves
  • salt - pinch

Cooking:

1. Remove the oil in advance from the refrigerator and let stand for a while. Add sugar to it and beat with a whisk.


2. Add sugar and vanilla sugar, continue to beat. Then inject eggs one by one.


3. Orange wash and wipe with paper towels. On a fine grater, rub the zest using only the orange part. Do not touch the white part, it is bitter and will give baking a bitter taste.


4. When they rub the whole zest, squeeze the juice out of the orange. You can squeeze straight with your hands, it is completely easy to do. Juice will turn out about 100 ml, it will be quite enough.


5. Sift the flour and baking powder through a sieve, stir in the salt.

6. In the flour mixture, add the liquid component with the juice, and mix thoroughly with a spoon. The dough should turn out not very thick. The recipe says that we will need 200-250 grams of flour, it depends on how much orange juice you get.


7. Oil the molds, if there is, then put them in paper forms. Then fill them with dough for 2/3 parts. Put half a nut on top. It will be delicious and beautiful.


8. Preheat the oven to 180 degrees in advance. Bake 30-35 minutes until ready.

This recipe is one of my favorites. Muffins are so tender and delicious that everyone is just amazed. In addition, their taste is perfectly combined with the aroma of orange and gives an amazing touch that causes the most positive emotions!

  Banana Muffins

It is also the favorite type of baking from millions of people. And prepare them with some bananas, and with additional additives. Since there is practically no banana in the baked product, I like to add nuts and chocolate pieces to the dough, or just one thing.

Therefore, if you want to cook muffins only with bananas, then do not add any chocolate or nuts. All other ingredients are laid in the same proportions as in the recipe. And I, perhaps, will prepare them with additives.

We will need (for 20 pieces):

  • flour - 350 gr
  • milk - 300 ml
  • butter - 115 gr
  • sugar - 100 - 150 gr
  • egg - 2 pieces
  • baking powder - 2.5 tsp
  • baking soda - pinch
  • vanillin - 10 gr (bag)
  • salt - pinch
  • banana - 2 pieces
  • dark chocolate - 80 gr

Cooking:

1. Mix all the dry ingredients, namely sifted flour and baking powder, soda, sugar and salt. Add sugar to your taste, either 100 or 150 grams, depending on how sweetened you are.

2. Now prepare the liquid component. To do this, lightly melted butter to bring along with the eggs until a smooth and even mass. Use for this whisk.

3. Continuing to beat, gradually pour milk.

4. Peel bananas and mash with a fork. It's okay if there are small pieces. It is always nice when tangible fruit pieces come across in baking. Although in this case the whole banana is completely dissolved in the dough.


5. Chop the nuts or roll them with a rolling pin on a cutting board or towel. Pre-sort the nuts, remove the partitions and the shells. Strong roll nuts are not necessary, the pieces should remain quite tangible.

8. We mold the molds with oil, line the paper blanks, if any, and fill in 2/3 of the prepared dough.


9. Pre-heat up to 200 degrees oven, and bake 25 minutes until cooked. Readiness is determined by a toothpick.

  Pumpkin - carrot muffins

I began to cook such pastries quite recently, as they say, the occasion helped! Not so long ago, I was cooking, and I left pumpkin puree. It was, of course, very tasty in and of itself, and it was easy for them to eat. But I had an unclaimed recipe that I had long wanted to cook. So I put the mashed potatoes in the fridge until the cake is eaten. Finally, a couple of days later, I started cooking muffins.

We will need (for 20 pieces):

  • flour - 2 glasses
  • butter - 125 g
  • granulated sugar - 200 gr
  • eggs - 2 pieces (large)
  • sour cream - 3 tbsp. spoons with a slide
  • pumpkin puree - 1 cup
  • grated carrots - 1 cup (about 2 carrots)
  • vanilla sugar - 10 grams (bag), or vanilla extract - 1 tsp
  • soda - 1 tsp
  • baking powder - 1 tsp
  • ground cinnamon - 1/2 tsp
  • salt - pinch
  • nuts - optional (handful)

Cooking:

1. Slightly melt butter at room temperature with sugar and whisk. One by one, beat the eggs and mix until smooth.



2. Add grated pumpkin puree. Stir with a spoon. To make a cake, I baked a pumpkin in the oven, then pulled out the pulp with a spoon and ground it in a puree.


I think that you can use a fresh pumpkin, just rubbing it on a fine grater. You can bake the pumpkin in the microwave or oven, and then make mashed potatoes, or you can stew in a small amount of water with the addition of honey and only then grind into mashed potatoes.

In my opinion, all the ways are good. Of course, this somewhat lengthens quick way   cooking the muffins themselves, but you know, it's worth it. The taste they get is just amazing and nothing like!

3. Sift the flour and baking powder into separate dishes, add salt, soda and cinnamon, mix.


4. Mix both masses with a spoon and add grated carrots on a fine grater. The dough turns out a pleasant orange color, not very thick, well, not liquid, such an average consistency.



5. Lubricate the molds and cover with paper liners, if you have them. If not, only molds will suffice. Fill the molds on 2/3 of the dough.


6. Heat the oven to 180 degrees and put the baking tray with the molds in the oven for 10 minutes. Then reduce the temperature to 170 degrees and bake another 10-15 minutes until cooked.

7. Remove the finished baking, let cool slightly and eat with pleasure.


I have to tell you that baking turns out very tasty, I would even say very tasty. In addition, it turned out beautiful sunny color, and it is very uplifting!

Now let's move on to another category of muffins baked with berries. For example, with blueberries, they are traditionally baked in America in Minnesota.

  American Blueberry Muffins

Such muffins can be cooked with any berry, but I want to show them to you on the example of the most popular in America (Minnesota), that is, with blueberries, although it can be replaced with blueberries.

We will need:

  • flour - 380 gr
  • butter - 120-125 gr
  • milk - 250 ml
  • brown sugar - 160-170 gr
  • eggs - 2 pieces (large)
  • baking powder - 1 tsp
  • salt - pinch
  • blueberry - 175 - 185 gr

Cooking:

1. Lightly melted butter of room temperature knock with eggs with a whisk. Continuing to churn gradually introduce milk.

2. Sift flour and baking powder. Mix them with sugar and a pinch of salt.

And you can not mix the berry with the dough, and put it just in the middle, already in the mold itself.

4. Oil the molds, insert paper liners, if any, and fill them with 2/3 of the dough. Try to evenly distribute the berries in them.

5. Bake the oven to 200 degrees and bake the products for 25 minutes, until ready.

Exactly the same recipe can be baked muffins with blueberries, or with blueberries and blackberries together. They turn out to be very tasty with strawberries, and in season, of course, cook better with this tasty and aromatic berry. You can cook with raspberries and currants, both with red and black. The principle is the same!

You can make muffins not only with milk, but also with sour cream and kefir. I already had a recipe with sour cream, now let's look at how to cook this delicious pastry on kefir.

5. Grease the molds and put the dough in them.

6. The oven to warm up to 180 degrees. Bake 30-35 minutes until tender.

7. Get ready muffins, let cool and sprinkle with powdered sugar. To eat with pleasure!

And for a change in the dough, you can pour dried or frozen cherries, or pieces of chocolate. And you can do both together.


It turns out so many recipes muffins I have accumulated. Honestly, I didn’t even know that I had gathered so many of them. But yet this is not all.

After all, there are still English muffins and they can not be ignored. After all, it is believed that it was in England that they started cooking them first. 2. Milk slightly warm in a water bath, add to it butter, cut into pieces. So it will quickly disperse. Stir to fully dissolve the butter, it is important that the milk does not become too hot. The optimum temperature for the dissolution of oil is 30-35 degrees.

3. Remove and allow the milk to cool slightly.

4. Beat eggs into foam using a whisk. And gently mix them into the milk with butter.

5. Mix the dry and liquid components and put in a warm place for 10-15 minutes to make the dough come to life. At the same time, it will begin to bubble slightly. The dough should get a little thicker than the pancakes.

6. Put the oven to warm up, we need a temperature of 180 degrees.

7. If using molds, then put the dough in them. And you can put the dough in a tablespoon on a baking sheet greased with vegetable oil and bake them in this form. In this case, they are obtained in the form of small cakes, which will be convenient to cut and lubricate with jam.

8. Bake for 15 minutes, give or take a little, it depends on the features of the oven.

Sometimes they are fried in a pan using butter.

9. Remove, allow to cool slightly. You can lightly sprinkle with powdered sugar.
