1. Cabbage salad with cucumbers and pepper

This is a simple and well-known vegetable salad, although not everyone knows how to cook tender cabbage with characteristic sourness.
  Ingredients:

  • 1 sweet pepper;
  • 1 kg of cabbage;
  • 2 cucumbers;
  • 1 tbsp. sugar or honey;
  • 1 tbsp. salts;
  • 1 bunch fresh dill;
  • 1-2 tablespoons table vinegar   (9%) or lemon juice;
  • vegetable oil.

Cut the cabbage as thin as possible. Send it to a bowl, then salt it, sprinkle with sugar and add vinegar. There we also add finely chopped dill and lightly mint everything with our hands so that the juice appears. Cut the cucumbers into strips and cut the peppers into cubes. Combine the cabbage with vegetables, fill all the vegetable oil and mix. You can try!

2. Salad of turnip and Jerusalem artichoke

But the recipe for an unusual, but extremely useful salad, which can be called a “vitamin bomb”.
  Ingredients:

  • 400 g of turnip;
  • 400 g of Jerusalem artichoke;
  • 400 g carrots;
  • 200 g of beets;
  • 2 bunches of greens;
  • olive oil and salt.

To prepare this dish, it is desirable to have a special grater (as for korean carrot) to rub the turnips and carrots in long, thin stripes. With the help of a usual grater, chop Jerusalem artichoke and finely chop the greens with a knife. Beets are ground separately from other vegetables and, placing it in a bowl, pour olive oil. This is done to ensure that the beets are not painted our salad in red. Give the beets 5 minutes to brew, and then mix the chopped vegetables and herbs in one bowl, pour olive oil and salt to taste. 3. Lenten potato patties

Many people just love burgers, but do not know how to make the dish lean.
  Ingredients:

  • 500–1000 g of potatoes;
  • breadcrumbs;
  • salt - to taste.

We clean the potatoes and boil it, do not forget to salt, then drain all the water and push in mashed potatoes. After letting the potato mass cool down a little, we begin to sculpt the patties from it, and then roll them down in breadcrumbs.

We cover the baking sheet with vegetable oil and, putting potato patties on it, send it to the oven for 15 minutes with the temperature set at 180 ° C. We take out the dish from the oven and, but do not touch, and let the meatballs cool for 10 minutes (so that they do not break). Turn them over and bake for another 15 minutes. If desired, you can decorate the dish with fried onion rings.

Addition.   You can serve mushroom sauce, stewed cabbage, pickled cucumbers, vegetable salad, etc. to potato cutlets. They can even be stuffed, get zrazy.



4. Lean soup

All fans of delicious rich borsch want to offer lean recipe   This dish, which will bring real gastronomic pleasure and at the same time will not break the fast.
  Ingredients:

  • 300 g fresh cabbage;
  • 300 g sauerkraut;
  • 6 tubers of potatoes;
  • 1 beet;
  • 1 large carrot;
  • 1 onion;
  • 3 cloves of garlic;
  • 2 tbsp. tomato paste;
  • vegetable oil, bay leaf, salt, paprika, dill.

Sour cabbage is sent to a deep pan, pour 4 liters of water and set on fire. Leave it to cook for about 60 minutes. Then shred fresh cabbage with a knife, and send it to the soup for 30 minutes.

Cut the onion into slices, which we then cut in half, cut the carrots and beets into strips, and the potatoes into cubes. Make onion and carrot in a frying pan for 5 minutes, then add garlic to the ingredients and fry for another 2 minutes. Fill the vegetables with two spoons of tomato paste and keep on fire for one more minute. In another skillet, we pass the chopped beet in parallel for fifteen minutes.

Once the cabbage broth is ready, put the potatoes in it, bring to a boil and leave for 10-15 minutes. Then add all the roasted vegetables there and cook for another 5 minutes. Add paprika, lavrushka and dill to our dish, and cover with a lid. After 2-3 minutes, remove from heat and let it walk for 15 minutes. You can try!

5. Brussels sprouts in tomato sauce

This is a truly exquisite dish that will delight and surprise you with its unusual taste, proving that lenten dishes are delicious!
  Ingredients:

  • 400 grams of Brussels sprouts;
  • 1 tbsp. tomato paste;
  • 1 tsp mustard seed;
  • 3 cloves of garlic;
  • 2 tbsp. soy sauce;
  • 2 tbsp. olive oil.

Put the cabbage in the pot and, bay cold waterput on the stove. Bring the water to a boil and let the cabbage boil for 15 minutes. During this time, pushing wooden mustard seeds and garlic crumbled with a knife.

As soon as the cabbage is ready, take it out of the water and send it to a pre-heated pan with hot olive oil. To the cabbage add all the other ingredients: tomato paste, garlic, mustard seeds and soy sauce. Fill the pan with 500 g of water, cover the contents with a lid and simmer for five minutes. Salting the dish is not necessary, soy sauce can handle this perfectly. 6. Rice with mushrooms

This wonderful dish to taste is not inferior to the pilaf, and the benefits of it are much greater.
  Ingredients:

  • 300 g of forest mushrooms;
  • 500 grams of round grain rice;
  • 1 large onion;
  • 300 g carrots;
  • 1 tsp salts;
  • vegetable oil.

We clean one carrot and chop it on a grater, peel the onion and cut it into cubes. We put the pan with butter on the fire, and as soon as the oil warms up, add vegetables to it and pass to a golden crust.

Mushrooms are washed and cut into large pieces. The remaining carrots are cut lengthwise into 4 parts, and then cut into small pieces. Add both ingredients to the fry and keep on fire for another eight minutes. Next, add rice to the pan and fry for another minute together. Blend mushrooms and vegetables with 750 ml of water, add salt to our dish, and simmer on the fire for fifteen minutes. During this time, the water is evaporated, but not completely. Remove the pan from the heat and cover it with a lid, leave the dish for 20 minutes to bring it to standard.

7. Lenten pancakes

What is Russian cuisine without pancakes? Here is a recipe for lean pancakes, which, no doubt, will become your favorites.
  Ingredients:

  • ½ kg of flour;
  • 1 tsp yeast;
  • 2 glasses of water;
  • 1 tbsp. Sahara;
  • ½ tsp salts;
  • vegetable oil.
  • 1 onion;
  • 1 carrot;
  • 1 cup of boiled buckwheat;
  • 1 handful of dry mushrooms.

To start, prepare yeast dough. In warm water dissolve sugar, yeast and leave for fifteen minutes. Salt the water and pour the flour into it, stirring at the same time, so as not to form lumps. Add to the dough 2 tbsp. sunflower oil and let it brew for about forty minutes.

While the dough is infused, prepare the filling. Boil and grind dry mushrooms. Send them to the pan and fry with ready buckwheat, carrots and onions. After that, fry pancakes, for this we grease the pan with a thin layer of oil, removing the excess with a napkin. We make pancakes with toasted filling, wrap them with an envelope, and, if desired, fry in a frying pan until golden brown (for those who do not want to increase the calorie content of the dish, you can not fry the pancakes). Addition.   Pancakes can be stuffed stewed cabbage, mushrooms, rice with green onions.

8. Lean vegetable soup

  Ingredients:

  • 3 carrots;
  • 1 kg of cabbage;
  • 2 onions;
  • 5 potatoes;
  • 1 parsley root;
  • 6 cloves of garlic;
  • 1 bunch of parsley and dill;
  • 2 liters of water;
  • vegetable oil and salt.

Clean the cabbage and cut the vegetable into square slices. Load the cabbage into the pot, add two liters of water and add some salt. Put the pot on the fire and cook for 30 minutes. Finely chop carrots and onions, and chop the potatoes into cubes. Chopped garlic is sent to the pan and fry it for literally two minutes, after which we add carrots and onions to it and pass 5 more minutes.

When the cabbage broth is ready, throw potatoes into it and boil for 10 minutes, then lay all the other vegetables. We wait until the soup boils, and immediately remove from the stove. Sprinkle our dish with chopped dill and parsley, and let it brew for 10 minutes under a closed lid. Bon Appetit!



9. Lean soup with vegetables and rice

And here is another recipe for a tasty, low-calorie soup.
  Ingredients:

  • 1 large carrot;
  • 1 onion;
  • 1 pepper;
  • 3 potatoes;
  • 4 tbsp. rice;
  • 4 cloves of garlic;
  • 2 liters of water (or broth);
  • salt, bay leaf, dill and vegetable oil.

We clean the potatoes, cut them into cubes and, adding to the pot with water or broth, send to the fire. As soon as the water boils, we mark 15 minutes. While the potatoes are boiling, we cut the onions into rings, and then cut the ringlets into four pieces. Pepper cut into squares, and the carrot chambers on a coarse grater. Garlic cloves just cut as small as possible.

Fry onion with carrot until golden brown, about 5 minutes. Shifting the fry to the edge of the pan, spread the pepper in the middle. Fry it for five minutes, then combine it with onions and carrots and move it to the edge together. Put the garlic on the cleaned middle and fry for a minute, then mix with the whole vegetable mass and remove from the fire.

As soon as the time comes, we send a broil in boiling water and add rice. Give the mixture to boil, and cook for five minutes, then remove from the heat and add the dill and bay leaf. Covering the soup with a lid, leave it for 15–20 minutes to reach the rice, and then proceed to the tasting.

Addition.   Rice can be successfully replaced with lentils or beans.

10. Breadsticks

As a lean delicacy, you can offer a recipe for sweet breadsticks, which, no doubt, will appeal to both children and adults.
  Ingredients:

  • 50 g activated yeast;
  • 1 kg of flour;
  • 2 tbsp. Sahara;
  • 1 tsp salts;
  • 100 g sesame;
  • 100 g of sunflower oil.

In a deep bowl pour 500 ml of warm water. Dissolve the yeast and 2 tablespoons of sugar in it. Mix and leave for 20 minutes by starting the fermentation process. Add salt and flour to the liquid, stirring to avoid the formation of lumps, and then add sunflower oil.

Leave the mixture for 20 minutes, letting the flour swell, and then start kneading the dough until it becomes elastic.
